Congratulations Jessica. You can definitely keep notes on Google Workspace and there are a few ways to do so. Create a Google Doc template and use that or you can create a Google Form which links to a Google Sheet in the clients file and complete that. I like the Google Doc as you can also use voice typing which may speed things up for you. Love your videos! To create HIPPA compliant client notes is there anything additional I need to do other than sign the BAA? Are both google docs and google forms equally HIPPA compliant?

Both Forms and Docs are covered under the BAA but here's the Google Workspace info on HIPAA Compliance which I'd suggest you check out: support.google.com/a/answer/3407054?hl=en The main thing is to do everything reasonably possible to keep your client data safe. Lock your computer or laptop whenever you're not using it. Make sure your passwords aren't easy to guess and that you don't share them or use them elsewhere.
If you use the paid for Google Workspace account you will be able to run your Private Practice using the system safely and securely. The ICO just wants you to take all necessary precautions and action to secure your clients data.
