all my adult life i had been searching for a dish i had once in a food hall in the middle of a mall, i didnt know the name of it and no amount of describing it to different chinese food shops got me closer, i live around the corner from a chinese fast food place that does chinese and malaysian as well as fish and chips, over the years i have been crossing things off the menu i have one by one, still not finding the dish i wanted, i gave up. thenabout 4 weeks ago i noticed one thing on he list in a subsection i frequently got, it was under nasi gorang and bami gorang, it was singapore noodles, i thought why not ive never heard the name before.. when i got it i was excited because it looked like the meal i had be searching for,, but the curry was over powering and i dont like shrimps so the next week i asked for no curry and no shrimps... it was perfect..i love it, i have it every friday, except once a month i force myself to take a break so i don't get sick of it, sometimes i buy 2 orders so i cant eat it for lunch and dinner the next day

One ingredient you got wrong is the curry powder. We don't include curry powder in our Hong Kong Noodles/ Sin Chew Bee Hoon. As you should be mostly tasting the seafood flavor or soy sauce flavor.

The thing abt fried beehoon (vermicelli) is that you can fry it with all kinds of ingredients. You dont have to follow everything exactly. Use the seasonings, spring onions and garlic/onions as per video but everything else is up to your imagination, just use one other protein besides egg and all the types of veg you like.

The curry powder needs to be added much earlier and cooked more. Otherwise it tastes like raw powder. The longer you cook the masala the better it tastes.
This is not always true - it depends what type of curry powder it is. There are 2 styles - one made from raw ingredients that needs to be cooked and one that is made from toasted spices so it is already cooked and it is better not to over that type of masala.
The best part about this dish is that I’m a singaporean and there’s no such dish over here
