I was able to get a bag of that Cowboy charcoal last fall, but my health issue has kept me from even lighting a grill since mid November. I will be at it soon. Woooooooo!!!!!!!! I wouldn't say it is a deal breaker but I would feel so much better having the sealer particularly on the fire box and handles and smoke stack. Those screws get tight but those parts also take a lot of stress at times, especially heating. Just hoping no leaks in the future but right now, my Dyna has yet to show any signs of leaks and that's after a couple of nasty falls. This last winter was a windy savage on my smokers. I have never kept an accurate count to be honest because I'm mixing two different bags (one lump/one briquettes) all the time but if I had to guess, eight pounds of briquettes and maybe ten pounds of lump? That's probably a terrible estimate but you've given me an idea for a video that would answer a lot of questions. Just how much charcoal does Dyna use on a Brisket Cook, Ribs Cook, Pork Butt etc. by Weight. Also, I should add that the 14 hours includes: 7 hours unwrapped, 2.5 hours wrapped, 90 minutes rest to cool down, then 3 hours in the oven at 170 for the hold. So, she was probably in Dyna for just nine or so hours. The holding in the oven has begun to be a must lately for pork butts and briskets.... that extra hold time really allows the brisket to achieve ultimate tenderness IMO. Cheers, Steve! 🔥

I actually opened the wrap up slightly for the cool down and then wrapped it back up once it got down to the 170-180 area, set my oven to 170 and let it sit in there wrapped for 3 hours. It softens the bark somewhat but the tenderness was there for sure. To me, the "HOLD" has become one of the more important parts of a brisket and pork butt cook.
