I almost screamed when she cut off the whole stem
I just cut off the very tip that brown and discolored. The stem os the best part and very edible. Its like the heart.

Excellent video. I've been eating Artichokes since 4 years old. My Aunt is Italian and taught me how to stuff Artichokes. She used Sauteed Italian Sausage and diced onions, cooled then mixed with Italian Bread Crumbs. She would drizzle 1 table spoon of olive oil over each choke and pour beef broth over each choke.
Then steam about 45 minutes in a beef stock & water with an onion and 4-5 garlic cloves. Ensure fork tender. My wife likes to use melted butter with Old Bay Spice for dipping.

Artichokes are delicious. I was introduced to them as a child when I lived in Paris and they are not at all intimidating. They are SO worth the effort. My mother never bothered cutting the sharp ends because they are soft after steaming. As for dips - no Frenchman would be caught dipping the leaves and the heart in anything other than a small bowl of pure melted butter (just like you do with lobster).

Darcy Crowley I know! I actually saw a video about how most fruit-bearing plants evolved in such a way where producing edible fruit is actually a selected trait, since when animals eat the fruits they leave the seeds behind and spread them around so more plants can grow. Obviously, the artichoke seems to have evolved in such a way that it's trying its absolute damnedest to NOT get eaten lol

Thank you very much. I have been living for 20+ years in the country where they sell artichokes in my local store and I was literally afraid to deal with them. Thank you for your instructive video. Here is for you the clue on the meaty part you mention in the clip: "The meaty part at the base of the artichoke leaves contains cynarin, a sweet-tasting chemical that makes any food you taste after the artichoke taste sweeter." That is why I got here in the first place to learn how to make other food sweeter without sugar. And thank you for showing how to actually eat this thing. I didn't know that too.

Best demo of how to prepare artichokes ever.
If you never tried to prepare artichokes it's quite easy one you get the hang of it.
Fresh steamed artichoke hearts are much creamier than marinated tart, vinegary hearts in cans & jars. Worth the effort & ttime to make them.. I love the warm hearts, {Yest that phrase makes me sound like a vampire lol]
You don't have to snip the spiky tips off the leaves. It's for presentation only, so skip this step for less work.
Once you get the hang of preparing them, you can go to another level and stuff artichokes with cous cous or seasoned bread crumbs as is done in Italy.
    Yum.

Growing up in my family, artichokes were something of a delicacy that we ate maybe once or twice a year, so they've never been scary to me; we boiled or steamed ours.. I still only have artichokes maybe once every summer, but I always look forward to them. We eat ours just dipped into melted, salted butter; I prefer it to dips or sauces.

Am I detecting Italian influences here? When I was a commis, 4 decades ago unfortunately, I was initially taught by an Italian how to prepare them. Then when I was about 19 I worked with a French chef who didn’t like the leaves at all. I think artichokes are one of those wonderful social starters where you pull off the same vegetable and share the dips. Nice to see someone prepare them the right way.

I remember eating fried tempura style artichoke from a little store in the middle of a artichoke field in California, that was so good and tasty.

I was never afraid to cook one but I didn't prepare it at all like you did. Just left the leaves the way they were and Boiled them lol. I really want an artichoke now... I also used mayo as a dip as well cause that's what was given to me first time I tried it. Goes pretty well together.

Benjamin Boyce it’s actually pretty easy. She makes it complicated. Just boil the artichoke for about 30-40 minutes and it’s done. Scrape the flesh as she says and the hair actually just peels off when you push it with your finger.

So many unnecessary steps. Only cut he stem if you need to. The stem is a part of the heart. Usually cut for restaurant presentation. Cutting the tips of leaves is also optional. Otherwise, good video.

😊🙏 No wonder many do not like eating Artichokes if they mistakenly steamed & eat the whole hard & hairy stuff! We think the olive oiled & salt & peppered & roasted method & dip in appropriate sauce & just eat the freshly parts & throw away all those hard & hairly parts is the way to eat Artichokes! 😅🙏 Thank You So Much for this Artichoke cooking tutorial! 🌷🌿
