SINKER
Recipe by Dan Scott at The Whaling Club in Los Angeles, CA.
2 oz (60 ml) Blended Scotch
1 oz (30 ml) Pineapple Juice
.50 oz (15 ml) Lemon Juice
.50 oz (15 ml) Ginger Syrup
2 dashes Tiki Bitters (or Ango)
Shake and strain into rocks glass
Garnish w/pineapple frond
Enjoy responsibly!

@@christinecamley there is nothing like sipping a Mai Tai in Hawaii. It’s like sipping wine in France or beer in!Germany.
It's a daiquiri like mix of homemade kitchen sink falernum, lime and rum, lengthened with coconut water. A friend dubbed it a Grinch because of the color (we weren't entirely sold on that) then another friend posted a Barbados Christmas Punch recipe that was similar, so it stuck. Or a mai tai riff with falernum in place of the orange liqueur.

All cocktails are summer cocktails. I drink everything whenever I can. It cool to see Scotch and pineapple working together. Love that Johnnie Black.
Equal opportunity drinker, eh? Lol. I’m a moody drinker, myself. I just enjoy certain cocktails more in certain situations. That said, I would never look a gift horse in the mouth.

Fascinating, this is such an ever-so-slight tweak, though I bet those tiki bitters make a *humongous* difference, they're packed with such intense flavor! I do love a good penicillin so I may have to try this.. and hope that I don't use a scotch that overwhelms on the nose... usually penicillins are put together with strong peated scotches, or at least a float or a mist of one.. i'd be curious to see how that will hold up against the pineapple and some good spiced bitters. Thanks for another great ep, Vino!
Hey David, the addition of pineapple and the tiki bitters really made for a more palatable cocktail. Tropical but still with that Penicillin bite. I tend to stay away from super peated Scotch/cocktails, so this really hit home. Cheers, pal!

So my favorite summer cocktail is a blended pina colada.
I make a mix with fresh pineapple kind of like this th-cam.com/video/PTeUQt6JDUs/w-d-xo.html
So I tried this sinker with some dewars 12 year and.....
It seems a little underwhelming
It may need a little sweet, perhaps a half ounce of honey syrup or demerara. maybe a smokier scotch, not sure.
It has a lot of potential, but I'm not sure.

The Sinker really lives and dies with the ginger syrup, IMO. I used a 2:1 rich ginger that is super spicy. Similar to Liber & Co’s. Otherwise, the pineapple can dominate. Cheers, Nick!
