    A lot of haters posting here (about contamination, knife type...etc., but you did a great job explaining HOW TO FILLET (i.e., purpose of the video. Yes, contamination and equipment is important, but, as your title states, FILLETING, is the verb and not PREPARING the area or SELECTING the knife. Haters going to hate.

      The thing he is a chef instructor, is not possible he use a green board to cut fish ,that’s just not fine

    i saw a lot post bout contamination,i think common sense is more important than a lesson,not all kitchen used colored chopping board,as a chef you guys shouldve know whats on that chopping board bfore you put ur stuff n start cut on there

    May I ask if you that big on cross contamination why you filleting fish on a green board ?

    I eat the head. Its my favorite part on the fish. The cheek meat is golden and so are the eyes.

    i just have to say, some places dont have colors for boards. only white. so in all honesty if your dumb enough to leave a cutting board for yourself to cross contaminate on, or leave around to have others cross contaminate on, (p.s. if they cant examine their work surface to see its being used to cut any type of product other than their type, they should be fired) instead of putting the board in dish or washing it yourself, you have no business being in the kitchen.
