I have been a vegetarian since 1985, and a vegan since 2019. How did I not think of blending chick peas and tofu before seeing this. Genius!

I am so thankful to have found you. I have chronic kidney disease and have to go plant based, no oil, because I’m also pre diabetic. I’m 73 and this is all new to me, and you are very enthusiastic and want us all to be healthy. I’m joining to learn how to cook and meal plan your way. I’m excited to learn.

This is my new go-to!!!! I have no-joke made it at least 5 times since finding this recipe. My mom and sister also make it now. When I'm just making it for myself, I just put it in a dish and use as a dip. If I'm making for company or bringing to a party, then I form the ball. Thank you Dillon and Reebs for all you do for us!!

I made this yesterday. It is delicious! I never thought of mixing tofu and chickpeas. The liquid smoke, mustard, and nooch is an awesome combo!!! It reminds me of cream cheese. I will definitely make this again and have plans to try all sorts of new flavors i.e. chunky garden vegetable. roasted garlic, chives, etc. Thank you for this wonderful cheese recipe.

I've switched to mushroom powder instead of nutritional yeast. It works great. My dog's ears and feet kinda yeast probably shouldn't be in my food. Esp for the sake of b12 when that b12 is usually cyanocobalamin (as opposed to methylcobalamin) . Plus dried mushrooms are cheaper and easier to get.

Tip for making this in a Vitamix: leave out the nooch, so everything is a bit more "liquidy" and add it at the end, to solidify the mixture a little bit.

In actuality, something like what you are making is the only TRUE vegan cheese. Cheese is coagulated milk (whether of animal or vegetable origin) protein. PERIOD! And the only vegan product that meets that definition is tofu. All of these other "vegan cheeses" that are creating by cooking a liquid with starches are...by definition...PUDDING, even if savory rather than sweet. Cheese isn't defined by being "melty-stretchy", like a lot of people believe. Only cheese containing casein protein has that property...and cheeses made from whey protein (like Ricotta) don't melt...or only barely. Since casien is strictly of animal origin, tofu in cheese-making acts almost exactly like whey protein. Using a combination of locust bean gum & carrageenan with give that melty-stretchy property to a tofu cheese, but leave it keto friendly.
