Gateau Arouille Mauritian Recipe (Eddoe Frying Snack)

500g Eddoe roots (Arouille)
20g fresh ginger
2 tbsp brown sugar
1/3 tsp salt
1/3 cup cornstarch or 1/2 cup depending on the consistency
1/4 tsp baking soda (bicarbonate)
Vegetable oil for frying
I grew up in Mauritius. I remember eating this as a kid. I live in the Uk now. It's my childhood memories commit back to me.

Hi. I absolutly love the recipe. I only wonder if eddoes fried is safe? I heard it needs to be very well cooked because of its properties. Some peoe can be very allergic

Je n'ai pas essayé, mais vous pouvez l'essayer cependant, le goût sera différent. Essayez d'ajouter un peu plus de gingembre.

Can i use normal flour instead of corn starch
Kesh Avi I tried it with normal flour, it was nice but not chewy. You can use only Poudre cange (Tapioca starch)

That's how I prefer it. You may reduce the starch. Also, most who sell these use cassava instead as it's much cheaper.
