Cornmeal pancake mix and cinnamon syrup

  • Making food from scratch is not hard when you have all the ingredients in your kitchen pantry. This recipe for cornmeal pancakes with fresh cinnamon syrup is made in minutes and will become a favorite. Pancake Mix: 12 cups flour, 1 1/2 c. sugar, 1/2 c. baking powder, 1 rounded T. salt, 1 1/2 c. powdered milk, 1 1/4 c. powdered egg (unless using fresh when making it). To make batter: 2 1/2 c. mix, 1 1/2 c. water, 1/4 c. oil.
    Cinnamon syrup: Melt 1 cube + 6 T. butter, add 2 1/2 c. sugar and 2 c. buttermilk (2 T. vinegar in 2 c. milk). Boil for 2 minutes. Take off heat and add 2 teas. cinnamon, 4 teas. vanilla, 2 teas. baking soda and stir with wire whip. Note: Use a big pan for when the soda reacts with the buttermilk.
