Pickled Okra Recipe
Ingredients:
3 1/2 pounds small okra pods
1/3 cup pickling salt
3 cups water
3 cups vinegar
Garlic cloves (1-2 for each jar)
Red cayenne peppers (1-2 for each jar)
Celery seeds
Mustard seeds
Dried Dill
Turmeric
Ball Pickle Crisp
Instructions
1. Wash okra pods and hot red peppers under cold running water: drain.
2. Trim stem ends off okra pods, being careful not to cut pods open.
3. Cut hot red peppers in half or cut the ends so the vinegar can seep into the pods.
4. Peel garlic.
5. Combine salt and vinegar in a pot and bring to a boil.
6. In a hot canning jar, add 1/2 teaspoon of each - celery seeds, mustard seeds, dried dill, turmeric and 1/8 teaspoon of Ball Pickle Crisp.
7. Pack okra pods into hot jars.
8. Ladle hot pickling brine over the okra leaving 1/2 inch headspace. Remove air bubbles. Clean jar rim. Center lid on jar and adjust band to fingertip-tight.
9. Place jars on the rack elevated over simmering water (180*F) in boiling-water canner. Repeat until all jars are filled. Process by lowering the rack into the simmering water. Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner and bring water to a rolling boil. Process pint jars 10-15 minutes. Turn off heat and remove the cover. Let jars cool 5 minutes in the canner. Remove jars from canner. Do not retighten bands if loose. Cool 12 hours. Check seals. Label and store jars. - แนวปฏิบัติและการใช้ชีวิต

my mouth is literally watering, i'm a fiend for all kind of pickles...I'm a fan of vinegar and/or fermented. I only recently started growing Okra, I have just enough to make one jar of quick pickled okra...so i'm looking around for recipes. Thanks for the info~

What is the pickled okra brine

Looks great. I canned okra pickles last year with a recipe that turned out awful. Used apple cider vinegar and pickling spices...takes my breath away to try to eat.
Please try this recipe and let me know how it turns out. I did several jars this week and they are crunchy and delicious.

Hello my friend. As long as your jars sealed you are safe to keep your okra for years. The vinegar also ensures a longer shelf life. I have kept okra up to 3 years and it’s still perfectly good.
I love pickled Okra but mild. I put my spices on the bottom. I also use chop sticks to help debubble. Good video! I was looking for a teaching video to send to my sister. She's never canned. Thank you! ❤

The okra has so much air inside it, I think? Since I added the Brian, the bubbles will not stop coming out at all. It keeps coming out of the okra.

No, I would not recommend using frozen okra. I think it may turn out to be slimmy.
Aren't those jars massively cooling off the entire you are time you are adding ingredients? How do you keep them hot for the canning process?
You want be able to keep the jars hot the entire time. Make sure you are not putting hot liquid in a cold jar. It’s okay for them to cool some. The main goal is to make sure the jars are sanitized. Thank you for watching my video. I appreciate you so much.

Good video. Putting spices & peppers on the bottom is how I do mine. If mine float,I always add small Okra or onions. I never bathe more than 10 mins.😊

Yes, apple cider but you can use either one.

Can you save the left over brine for later use?
I would not use the leftover brine to preserve a new batch. However, you may wish to use it to marinade meats or make homemade salad dressings. Thank you for watching.

How long do they stay in the water bath?
I didn’t leave them any more than 10 minutes. If you leave them longer, okra will start to cook really fast and you don’t want slimmy pickles.

Absolutely, yes you can. I had 4 jars and wish I could show them to you but my husband and daughter ate all of them. They were delicious and crunchy. Go for it!

This is the best video I have ever seen on pickled okra! Thank you! Is the picked crisp the same as Alum?
Alum has little crispness effect on quick-process pickles like this recipe. I use alum on my cucumber pickles and it has to sit for 7 days and then rinse.
Calcium chloride is marketed as “Pickle Crisp“, “Xtra Crunch“, or simply “calcium chloride“ and it does not take very much.
They both will create crisp pickles but using pickle crisp is best with okra.

I left these for one week because I was so impatient and wanted to taste them before I did a second batch. They were so good. But, try to wait for 4-6 weeks for real.
It's better to prepare it in a faster speed and write the ingredients with the measurements . What type of vinegar you are using? Do you have to boil vinegar first?
