A short Documentary on the Goan Baker( PODER)

  • Baking Bread has been a profession practiced by Goans for a very long time.
    The Portuguese introduced pao(bread) in Goa soon after their takeover of the State of Goa. The Portuguese taught Goans the art of baking bread and skills in creating some confectionery items.
    The Jesuits given the charge of the Salcette Sub district, in the 1550s, passed on to the converts there two new professions, wine selling and breadmaking.
    Padeiros (poder in konkani), have traditionally come from the Christian community and many are from Salcette.
    The Jesuits taught the bread making skills to the Chardo Caste.
    Breadmaking involves many people: mixers, moulders and those who do the baking. In the traditional process, dough was kneaded with bare feet. Mud or brick ovens were used. Once ready the bakers would start their round on feet with a bread basket on their head and a bamboo stick with loose metal rings which was used to alert the villagers.
    Baking profession in Goa is hereditary, some families have been in the business for four generations or so.
    The process of baking bread in recent times has been modernized with latest machines, and bakers have set up shops where they sell their savouries and sweets like Bolinas, bols, bebinca, etc. apart from Bread.

    Documentary is very good but it is pertaining to batti (which has charcoal inside only)and not hornn (in hornn charcoal is removed and cleaned properly)
