This takes up so much less space and frees up your fridge and freezer. Dehydrated Cauliflower Rice rehydrates and heats up beautifully and I also show how I like to prepare it. Plus, once it's dehydrated, you can grind it up and make cauliflower that you can actually bake with!! Love, Mary

      @Frank - Hi Frank, Is it fuzzy? Or just white? If it is just white and not fuzzy, it may be kahm yeast. I can't put a picture here, so search the term on the internet so that you can see what it looks like. It can happen with ACV - however it is not harmful, just persistent. Unfortunately, Ferments can be very persnickety!! If it is mold, you will have to throw it out and start over again. Try using very firm tart apples, like Granny Smiths. They will be less likely to turn into mush. Keep me posted. Love, Mary

    This was quite informative and enjoyable. You have a nice presence and delivery which is no small feat. I have been on a keto regimen for about 18 months and found Cauliflower rice to be a healthy, delicious and versatile replacement for rice. You’ve given me a renewed desire for a nice dehydrator because preservation and storage is key for just me. I’m a new fan and now will be catching up on all your videos. Well done!

    I was just thinking about dehydrating my store bought cauliflower rice to make cauliflower flour! It just popped in my head, didn’t realize it was a thing already! I want to make my own low lectin, gluten free flour. Thinking millet, cricket, arrowroot almond. Thanks so much for the tips!

    I was just gifted nine cauliflowers. This video was very informative on how to dehydrate it. The flour sounds very interesting. I’ll have to look that one up after I master dehydration.

    Thank you, Mary. I can often get cauliflowers at 99 cents each. They have a few brown spots but are perfectly good. I'll make some dehydrated cauliflower rice with the next one.

      Vera Campbell - Great! I have seen a number of them at various goodwills in my area. And it’s always usually after the holidays. So keep an eye out. I hope you find one. As a sidenote, you can dehydrate cauliflower in the oven but it just takes a little more work. You have to set your oven as low as possible. If you can set it at 150°F that’s great. If not set it at its lowest setting and spread the cauliflower rice out on parchment paper on baking pans. Periodically rotate the pans of cauliflower rice and also periodically crack the door open of the oven. It’ll take longer but it will eventually dry out. Hope this helps! Love, Mary🤗🤗🤗

    YES!! I am so happy to see this video! I learned about goitergens, & that vacuum seal product, too. Can't wait to see the pizza crust video. That'll be a very big, positive, healthy, & delicious video for me & my family. I JUST realized WHO you remind me of.....because you teach, AND, show a recipe....Alton Brown!! Seriously. I love learning, as well as the recipes. I'd love to have a dehydrating device. But, again, I'm on a very limited income. I dont have a vehicle now. So, I'll have to locate a great deal online.     Watched it again. I can hardly wait to try it. Gluten is not my friend so I make pizza crusts, etc. from cauliflower rice. But I've never dehydrated it.

      The pizza crust is amazing!! I'll be making more to film for a video. I was surprised how much turning the cauliflower into "flour" made a difference as compared to making the crust with a crushed cauliflower mixture. Love, Mary

    Love this. Thanks! Dehyrating a head now. But curious why you use both oxygen absorber and vacuum sealer. Don't they do the same thing?

      Excellent question!! I use the oxygen absorber because even though I am removing air, my lids are not able to be airtight. So overtime some oxygen may sneak in, but then the oxygen absorbers will take care of that. Hope that makes sense. Do you enjoy making traditional foods?     It's always a good thing to store things in less space. That's why I prefer my books for pleasure reading to be in ebook format. I have the basic Kindle e-reader and it fits all my bags and functional pockets (ones that fit my entire hand or similar sized items). It's especially beneficial when I read either a long book or an anthology. Our trick or treat was moved to tonight due to the bad weather on the original scheduled date. Yesterday was Lee's and my 12th anniversary. Unfortunately I nearly die of breathing problem trick or treating in our neighborhood and no one was available to drive us to our usual spot which is my mother's neighborhood. It's much easier on me and he gets better or multiple candies there. He got less the one time we tried our neighborhood and at the end I was struggling to breathe.

      @@MarysNest In my case my large bust prevents my lungs from fully expanding which caused sleep apnea when I was a 34KK after giving birth to Thomas and made my lower back pain move up to my neck as well and was oftentimes debilitating. I walked too much one day and stopped breathing for 3 minutes so I wouldn't do anything strenuous like swing kettlebells which is my preferred workout. A breast reduction improved my breathing somewhat but not completely. Also my back pain disappeared. I only lost five inches but already gained one back due to my genetics which cause me to gain a cup size every other year no matter what I do and two when I am pregnant which is why I had my tubal ligation after Thomas. I still need to lose eight more to be comfortable again. I've never lost from the fullest part of my bust from diet/exercise or either time my breast milk dried up so surgery was and still is my only option. I breathe better when I'm sleep now but exercise is still rough for me. Deep breathing is impossible for me. My back pain is starting to come back as well. I only notice it though when I'm in certain positions.

    Mary, what is the nutrient profile of the home-dehydrated cauliflower rice? Are there any nutrients left? I have always hated both cauliflower and broccoli due to their cooking odors. If I’m going to go through this process, it had better be worth it smell-wise AND nutrition-wise. ☺️

    Hi Mary, thank you so much, you've done it again. I can't wait to see how you make your pizza crust. I have always wanted a dehydrator and I finally pulled the plug and got one on Black Friday but now I find myself a little intimidated by it. Do you know what the ratio is? Like, how many cups did that one cup of dried make? Thank you again for all that you do. I'm off to watch your pizza crust video.

      Hi Stacey, You are so patient to wait for me because I have not yet filmed the pizza crust video. I got involved with my holiday baking basics recipes - but I will get back to the cauliflower come January! I would estimate that one head of "riced cauliflower" dehydrates down to about 1/4 cup! It really shrinks! LOL!! Don't be intimidated. But I understand completely - I was the same way in the beginning. Once you start experimenting, you will really get the hang of it. You can make a mistake. Start checking on things at around 4 hours - and then go from there. Even if you over dehydrate fruits and veggies - they make a great crunchy snack or salad topping!     Wonerful video, Mary! You gave us so many tips and ideas! So clever to think of dehydrated cauliflower rice as brown rice. Wouldn't it be delicious sautéed with some paprika (smoked paprika would be especially delicious, i think), turmeric, saffron, beet powder or matcha tea powder for color??? ~Michele

    Is there some way to keep it whiter in color? Esp for use for cream soup?

      I'm not sure when dehydrating yet, but I have found with freeze drying that adding a little lemon juice or Fuit Fresh to the blanching water did keep it quite white. Freeze drying turns them into such lightweight bits they almost fly away and are more like instant potatoes when rehydrating. Since dehydrating makes the cell walls tougher, I'm hoping it will stay more firm and rice like when using - even if brown. I will try to comment again when I know 😊

    New to your channel! I really enjoy your information. I am just starting to think about cauliflower rice Having some questions however I have been enjoying making chicken broth in my fried rice. I usually use the broth in place of water I however think I'd end up with soup. Then I thought about maybe using Bone broth paste. Do you have any ideas on this subject? I love the rice with onion garlic turmeric salt and pepper then I mix salsa broth and water for chicken-flavored Spanish rice. But now want to cut down the carbs.

      Hi, I just saw your comment and you may have learned the difference by now, but if not... maybe this will be helpful. Essentially, O² absorbers remove the oxygen from the air inside the container by a chemical reaction with iron particles which uses up the oxygen (but other air components like nitrogen and hydrogen remain). Moisture absorbers help the food stay dry by collecting water into the little silica beads in the pkt but the oxygen is not affected and is still in the container. Sometimes people also vacuum seal containers with either option (but remember that is not the same as safe canning which uses heat and pressure to kill botulism) Generally O² absorbers are used for longer term storage to diminish the ability of living organisms contaminating the food whereas moisture absorbers are used for items you would be opening and using more frequently. Hopefully this makes sense. 😊

      I have done this in the FD. Very, very, lightweight bits! Also tricky to rehydrate as it's more like instant potatoes. I am going to try dehydrating w her method next - which toughens the cell walls of the food- then FD. I know that is a lot of steps but my hubby is diabetic and I am trying to have low carb long term storage options for us. 😊

      @@MarysNest Kitchen Aid sells several models. Do you have the model #? I live in Canada and I think some of the models are not available on Amazon, they do ship from Amazon.com. Does the container come away from the unit for cleaning? How does it do for grinding chia seeds and flax seeds. Using my Braun I have to scrap out the chia and flax seeds.

      I bought a dozen half-gallon "Ball" jars from Wal-mart.
      I received regular mouth & large mouth "Food Saver" jar combo kit directly from ordering with them (out of stock elsewhere).
      I followed their video (2 jars switching 2 lid sets). - Fail
      I removed seal and re-inserted upside down
      (2 jars switching 2 lid sets)
      . - Fail
      I then filled 1 of 2 jars 7/8 full with water (2 jars switching 2 lid sets. After trying water filled, tried empty again). -Fail

      Sometimes mine don't seal if I haven't placed the adapter far enough down over the top of the jar. Also, go straight down when putting it on and more of a "peeling" motion from one side when taking it off. There seems to be more of an issue with regular mouth size. Some people use two flat lids on top of each other - the extra thickness seems to help. I also regularly use one of the FoodSaver cannisters and seal repurposed jars for dried foods. Put lid on jar "finger tight" - put jar into cannister - cover and vacuum seal cannister - then slowly release cannister lid - gently check jar lid - if sealed tighten down - if not, re do. Very easy!

      Excellent question! Yes, you can dehydrate cauliflower rice in the oven, just make sure you spread it out in a thin on a parchment lined baking sheet - and you can put multiple sheets in you oven on different racks - and set your oven to it's lowest temp. 150F is ideal but you can also set it at 200F if that is as low as your oven will go. Periodically, open the oven door and move all the "rice" around. It can take *maybe* 4 hours to dry - but every oven is different and you will have to experiment. Keep me posted on how it turns out! :-)

    Greetings, Mary. We've been thinking about freeze drying foods, prepper-style, due to the talk/rumours we've been hearing about coming food shortages due to climate change vs. the Grand Solar Minimum. Do you have any experience with freeze drying? Any thoughts about them? Our dehydrator is tiny, but this sounds good for short term storage.       Celina Svahins - Hi Celina, The official rule is that dehydrated foods can last anywhere from four months to one year. However, the unofficial rule is that dehydrated foods can last a lot longer. I have seen various websites where people talk about being able to dehydrate food and keep it fresh for 10 years or even longer. They dehydrate the food till it’s very dry and then they pack it in mylar bags with an oxygen absorbers and suck all the air out with a food saver and then heat seal it with the food saver. That may be an option for you. You may want to research that and learn more. I don’t know too much about it. So sorry but I don’t know a lot about freeze drying food. I understand freeze-dryers are very expensive. Love, Mary🤗

(I've done some food haul videos of Naturally a Deal on my channel Little Ladybug Patch. youtube.com/@littleladybugpatch ) I don't have a food processor (yet) and my hands are too arthritic to use a box grater for a large amount of cauliflower. Any thoughts on that? This would be cheaper and easier for me if I could do that.
