Raspberry Bliss Balls

    Ingredients:
    1 Cup Cashew Nuts(Raw)
    1/3 Cup Shredded Coconut
    1/3 Cup Freeze Dried Raspberries
    2 Tbsp Honey
    1 Tbsp Coconut Oil
    Few Drops of Vanilla Essence
    Pinch of Salt
    Method:
    Place all the ingredients in a food processor and blitz until cashew nuts are ground to a coarse powder and mixture is a bit sticky. Be careful not to over do it or cashew will turn into butter and release too much oil (check video for consistency).
    Place mixture in a plate.
    1/2 Cup of Whole Almonds
    1/2 Cup Desiccated Coconut
    Use a scoop to portion equal amounts of the mixture. Press it into a flat shape and place one almond in the centre. Then start shaping into a ball. You should get about 10-12 bliss balls.
    Toss the balls in a bowl with the desiccated coconut and coat evenly.
    They are ready to eat right-away or can be stored in an airtight container in the fridge for 5 days.
