    My adventures with Ghana food right here in Accra Ghana continues. Aside popular Ghanaian foods like fufu, there are many hidden ones that could be explored and enjoyed. In this video I share with you a more rare one from the Nzema people in the western region of Ghana. Its is called Atieke. It is made from cassava.
    The cassava is ground into a dough and then all the water is drained out. Then the cassava dough is made into very small balls, dried and then steamed. Then sold ready to be used for cooking. It can be had with Ghana stews, soups or just plain chilli sauce.
    This dish is sold as street food as well as in local Ghana restaurants.

    Attieke is the cassava COUSCOUS originally from Ghana southern region. Gari is the raw materiel for making attieke. The traditional couscous rolling skill and water is all you need to transform gari into attieke couscous. It was introduced many centuries ago into Ivory Coast by the Akan's queen named Pokou. Queen Pokou and her clan found refuge in Ivory Coast, escaping a violent royal succession warfare in Ghana. As they occupied the south of Ivory coast, attieke become the national dish following the country independence from French rule. It is suppose to be Ghana national dish, Ironically, Ivory coast is now the best place to experience the variety and complexity of attieke dishes. While the old jollof kingdom located in Senegal and Gambia are the best place to discover and understand the culinary tradition and secret of jollof rice invented by wollof tribe.

    • @willba2817
      @willba2817 ปีที่แล้ว +4

      so i want to correct you attiéké is not from ghana but from the ivory coast in west africa everyone knows that.
      attiéké comes from the word "adièké" which means for sale in the Ebrié language (Akan ethnic group from the Abidjan lagoon) attiéké has no meaning in any language of Ghana, gari and attiéké come from the same ingredient cassava but their texture is totally different, gari is almost like flour, and attiéké is pure cassava couscous and we have a variant of attiéké with larger grains that we call "abodjaman" in ivory coast, but we are the same family from the Ashanti kingdom.

      @@willba2817 thank you some girl argued that it belongs to nzima’s too form western Ghana when it’s totally false. Mind you it belongs to ebrie’s, and they think reheating it is making it when the process is totally harder then think.
