If you are using whole spices , it is better to dry roast them as it gets rid of any moisture. You can replace any of the whole spices with ground ones . Ground spices and seeds do not have to be roasted .🤗
You can use any chilli powder that is available. Thai chillies are very hot 🥵 they are also known as bird’s eye chilli. California chillies are not that hot. I hope this explaination is helpful.

They were supposed to be kashmiri chillies . Where I live they are very hard to come by , hence California chillies . Lots of colour and very little heat .

Where I live we can buy it online and since the collapse of the SA Postal Services that takes time and a lot of money to have it delivered. AND when you run out of Kashmiri - our local chillies are bright red, give ZERO colour to the food and is flaming hot!
