- 📍 Ingredients:-
For Masala:-
Black cardamom seeds 5-6
Cumin seeds 3 tbsp
Fennel seeds 3 tbsp
Cloves 15
Green cardamom 18-20
Black pepper 1.5 tbsp
Black cumin seeds 1 tsp
Nutmeg
Mace flower 3
Cinnamon 1 small
Coriander seeds 3-4 tbsp
Bay leaves 2
For cooking kabab mixture:-
Chicken 1.3 Kg
Garlic (peeled) 1 cup
Ginger (peeled) 1 cup
Split chickpeas 750 gm
Grinded powder
Salt 3 tbsp
Turmeric powder 1 tsp
Red chilli powder 2 tsp
Onion 3 cups/300 gm (roughly chopped)
Water 2 cups
For mixing:-
Lazzat-e-taam 1 tsp
Meetha ittar 2-3 drops
Melted butter 3-4 tbsp
Thick Curd 2-3 tbsp
Onions 3 cups (finely chopped)
Ginger around 1 cup
Green chillies around 1 cup
Coriander leaves 3 cups
Cooking Oil for frying

Madam the amount of chane ki daal is too much in proportion to chicken. I am from Lucknow and my mother taught me to add roughly 60 gram daal per half kg mince meat or it would taste like daal kabab.
May be Lucknow cooking has become different now as my mum is long dead and I live with my family away from Lucknow
Yes, but it is made in two ways, in one, a handful of pulses is added to half a kilo of meat.And in another way, half a kilo of meat is added to a pav i.e. 250 gm lentils.I have made meat in half amount method.shukriya ️
I have a question.
1. How much quantity of keema will be needed to make 15 pieces of kebbas which I can keep in fridge.
2. For how many days kebabs can be kept in fridge ?
400-500 gm keema
Fridge up to 6-7 days and Freezer up to 1+2 Months
