The men not wearing bearskins are not beefeaters they are Yeoman Wardens and they act as pr for tourists and they live at the castles while on their duty shift.
The "word" is the password allowing one to enter and circulate within the tower when it is closed to the public. It changes daily and here the officer of the guard with the escort is going to collect the new password.
The officer's left arm was free (sword in his right hand), while the enlisted men had their right arms free (slope or, as we Americans would say, left shoulder arms). The movement of feet and legs was synchronized.

He had a clipboard in his left hand and sword in the right. You do not swing your arms if arrying anything in the hand.
The sentries change arms due the weight of the rifle.
