WRT Fennel and "whenever you see it pick some": - In NZ fennel is an invasive weed. About 1977 down the road on "spare" land owned by the railways, there grew a large patch of just fennel, so large I tunnelled through the stalks and cleared a patch to grow another weed, though not a legal one.
Floyd was a bit keen on the fermented grape juice. His accident? An old lady trod on my finger as I was crossing the road to my hotel last night. Classic!

Absolutely no problem with sustainable cooking! What is sustainable cooking, using the whole fish rather than just the dorsal fin and throwing the remainder back into the sea! Monkfish is the same use the whole fish! As for blood, the shark steak went straight onto the hottest grill, won't do any harm and the shark skin is fine provided its fresh which looking at the colour of the shark flesh it was! Great clip of two British greats!
Classic Floyd and a very young Rick. I’ve read Rick’s memoir and he gives great credit to Keith Floyd. Why didnt you, Rick, wash the blood off the shark?
I quite like the two of them equally, but wasn’t Keith Floyd jealous of Rick Stein?, you can kind of see a touch of it here. The producers of Keith’s show went off to work with Rick Stein instead, I think the filming team found Keith difficult to work with, and Stein was the new guy on the scene. I can understand some anger over being abandoned by his team, but I don’t know why he would be so sour about his affairs, to me, he’s always seemed like a interesting guy and he just did his own thing and enjoyed himself to the full. Sometimes in life, it’s hard to notice our best attributes and often it takes others to point them out or at least reassure us.
Gotta say that dish look very toothsome indeed. Shark's quite plain so the fiery sauce go nice. Looks like the the old kitchen at the Seafood Rest. back before they had it all done out. I last ate there in 1999! OMG !! I had one of those grills, back in my flat in Willesden, innit. I love watching these two geezers - clash of the titans! Floyd much more polite than the encounter with 'Nick'... hahahahaha
@@mr.e0311 Not so much that but rather Keith was probably drunk. He never did anything on TV without a drink in his hand. Having said that, he was very well respected for his culinary knowledge and cooking skills. He just made a simple mistake is all.
What? Floyd started with his own restaurant before the producer showed up for lunch one day. He retired from the kitchen later to become a restaurateur... but most definitely a real chef. or cook, if you're more comfortable with that term.
Noz Islam no no it’s still a fish so the meat is flaky, giving the impression of dryness, but by marinating, searing at a high temperature and resting, you can be sure to have a moist steak.
Im not sure Keith liked Rick as he felt Rick had nicked is producer and director. But actually in this piece i feel even before thet Keith was intimidated by Rick. But also i really felt he wasn't pissed in this scetch and deliberately got Ricks name wrong
While I cannot understand why shark fins are well liked in China, it should be point out that sharks are generally not eaten because they dont taste good at all. You will need a strong sauce like what Keith is doing. The shark skin is simply too tough to be eaten.
When cooking shark you need to trunk it straight after its caught, meaning cut off its head, fins, tail and remove the guts. This is to remove the ammonia that sharks have, and the reason for its smell. Very surprised Rick or floyd did not do that before cutting the shark into steaks lol
Surprised at how many people in the comments are so sensitive about the blood. Here's a newsflash for you: animals bleed. If it upsets you so much, maybe you should consider vegetarianism.
I love Kieth Floyd & Rick Stein's shows but I wouldn't consider ever cooking anything they make on them, more like food documentaries than cooking shows 🤔
Done with too much haste, alcohol not cooked out properly, throwing booze on the grill. They did appreciate food and were great entertainers but real ordinary chefs.

No one compares to Floyd i find stein quite boring .. His shows are good but Floyd was on a different level in front of a camera ...
My respect for Floyd has doubled after seeing how senior he is to Rick Stine! The guy was the god of British Food Culture!

@TheRealAlanPartridge fresh sharks meat smells strange (because of fish fat) when it is raw, but if you cook it - it is very soft and tasty.
