Whenever I make home made sauce it starts with olive oil, chopped onions, celery, garlic and as it softens, I melt in 3 or 4 anchovies. No fishy taste at all. It melt down in and gives wonderful yummmm to it.
I'm telling you what, this is going to be my new go to. We made this last night and it was delicious! Made one change, I only used a half of pound of spaghetti. Spaghetti Positano has everything my taste buds crave.
Love the Amalfi coast especially Sorrento. Bring on the anchovies on pizza too and especially one of my faves..Puttanesca. Anchovies add glorious umami. Love in a bowl.
Mmmmm... In Italy we don't really use this crazy quantity of garlic. That's probably the way the cuisine turned in the USA. Authentic Italian recipes are another thing, a bit different 🤷🏻♂️

Joe, I know you probably forgot more about cooking than I know, that being said, you seem like a man who can always learn something new and also, always want to know if your wrong. You stated the seeds are where the heat resides in a pepper but the truth is the veins of the pepper is where most of the heat resides. Just a nugget, also, everyone should try a bottle of 'Vito's and Joe's Extra Virgin Olive Oil'. I would reckon to say the best extra virgin olive oil for value. It's better then olive oil twice as expensive. Anyway, perfect time to order a few bottles and cook some of your dishes with the family.
You could- but it wouldn’t obviously taste the same. Cilantro is very very strong and used in Mexican food. I’d use basil before cilantro, it fits better with the Italian flavours. That’s just my advice and opinion thou.

Well. I am American Italian. Parents from Italy I was born here. I am a dual citizen but my first language is english. So even when I say it in Italian it comes out american Italian. lol

You could- but it wouldn’t obviously taste the same. Cilantro is very very strong and used in Mexican food. I’d use basil before cilantro, it fits better with the Italian flavours. That’s just my advice and opinion thou.

Soak the anchovies in a glass of milk for a few hours and it pulls out all the salt.
