    For those who don't want to fry, there are recipes for baking cauliflower "wings". You could eat those while sipping on an avocado milkshake, making you the slim shady of your "wings a la Brady"

    I made these for a vegan friend that joined at the super bowl party I attended. To make them vegan we simply substituted the egg whites for the juice of canned chickpeas. Obviously we made modified the sauces for these bad boys, but dear Lord these things were out of control!

    Loving all these vegetarian recipes!
    Might be worth mentioning that many worcestershire sauces contain anchovies, so if you want the blue cheese dressing to be vegetarian as well, make sure you're using a vegetarian worcestershire sauce.

      @@Champsreef303 someone who eats eggs is still a vegetarian, vegans also wouldn't eat the blue cheese but Anchovis are generally neither vegetarian nor vegan, even though some who consider themselves vegetarian still eat fish for some reason.

    I always love the recipes and because of your explanations, I know I could make a decent version. But what I really love are the little side comment, tips, tricks, and rules of thumb you put in. They transcend the dish you are making and help all of us become more efficient and better in the kitchen. ( P.S. I feel I have earned a thumbs-up for using "transcend" in a video about cauliflower)

    Love it - I tell you what also is delicious - chickpea flour (besan) batter. It seems to turn out extremely crunchy! Cauliflower is my favourite vegetable!

    I made this recipe and it was delicious. You're kidding yourself if you think it tastes anything like chicken though! The tiny pieces are almost like tator tots. The bigger pieces taste like... uh... cauliflower... But the combination of the steaming hot cauliflower with the crispy breading and spicy/acidic/creamy sauce is to die for.
    I recommend not coating them with the sauce since it makes them soggy. You want them to be as crispy as possible. Instead, just take your red hot and mix it into the blue cheese dressing. Only dip it immediately before eating it. Forget about the butter, it's not necessary.

    I've had califlower curry on califlower rice and it was amazing. I'm a die hard meat and both my boyfriend and I enjoyed every bite without thinking "this is good but it could be better with meat" which is what I always think with most meat substitutions
    Can't wait to try this!!

      swap the egg with some cornstarch slurry. Or anything wet, the goal is to just get the flour to stick

      No need to be scared! Just dont fill the pot more than half way, use a thermometer, and use metal utensils (plastic melts!)

      I've followed recipes in the past for this that cooked in the oven. They won't be as crispy, but you can always use the broiler to get them a bit crispier. Also if your over has convection, or you have an air fryer, it'll help a lot.

    I recommend leaving the blue cheese in the freezer for an hour and then grating it in the sauce. I learned that from Chef John, it's a lot easier and ensures better spread of the cheese.

      This is what I do but put it in a food processor. Basically powders it and distribution is perfect. That being said, I also throw some of the big chunks in because I like to get them once in awhile.

      Personally, I like the chunks and flavor contrasts in the Blue Cheese dressing (creamy vs the Blue Cheese chunks) against the Buffalo Sauce - but hey, to each their own 😊

    Looks great. One question, so for each batch we shud start at 325 and raise to 350, and then wait for it to drop to 325 for the next batch. Won't it take a ridonculous amount of time for a pot of oil to come down in temp 25 degrees?

    what if i dont have corn starch? any advise to make using just flour just as crispy?
