This is the best cauliflower wing recipe. I cooked it twice but it didn't pop with flavor because it didn't cook thoroughly. I watched the video and adjusted the heat to low from medium and it cooked perfectly. One thing that I'd like to recommend is to put the spices in the wet dredge and NOT in the dry dredge. The wings popped with flavor when I did that.
If you keep some baking soda and cream of tartar in the kitchen, you can made your own baking powder as you need it. It doesn't lose its potency that way. One part baking soda two parts cream of tartar. If you wanted to mix a small jar you can add one part cornstarch to slow down the reaction. I just make it as a need it, its more simple that way.
I recommend steaming the cauliflower before frying to get a texture that actually is similar to chicken. Otherwise you have fried cauliflower that's a crispy outside but then just hard cauliflower on the inside. Steaming then frying is how we make Gobi Manchurian, the og fried cauliflower
I was afraid of that happening, but the way I cooked it they came out perfect. Soft but not mushy, I think if I had steamed these first they would be too soft, but that's just my preference!
But now that you mention it, I'll add a note to the blog post. I did try brining them in boiling water with some flavoring and that softened them a bit too! Thanks for the notes!
Your recipe for sauce looks incredible. But just wanted to note for those that are a little lazy (like myself) that Sweet Baby Ray’s Buffalo Sauce is vegan and terrific. I always keep a bottle in my fridge.
I strongly recommend anyone planning to deep fry, get a deep fryer! I hardly see this recommended but they are awesome! I grabbed one for $60 on Amazon and it was a great investment. I don't use it often - maybe a few times a year - but it makes frying in oil SO much easier: even heating, way less messy, easier to clean, doesn't stress your pans as much, and SO much easier to take the food out with a basket. Best of all, it controls the temperature for you so you can dial it in precisely - great for french fries & vegan doughnuts.

Normal hot sauce is vegan 99% of the time. Wing sauce usually isn't. For the accidental one, he was talking about the franks wing sauce. The normal one is completely vegan.
What do you do with the oil once youve finished frying you dont just throw it away do you ??? becaus eI want to make this for myself but it seems like a waste of oil if its gonna need to be thrown out at the end

Not at all. They were cooked through, but still had a slight crunch to them. If you over cook them they'll get soft and mushy for sure. If you want to infuse more flavor into them you can brine them. I saw Brian Lagerstroms video where he did this. I tried it out, but I felt for the effort there wasn't enough reward, but they did have more flavor than just regular cauliflower.
I can't stress enough that paper towels and NOT a rack is the way you want to go if your goal is getting rid of excess oil. the breading is like a sponge, it's not going to drip nearly as much oil as the paper towels will steal.
I combine the two worlds and coat my rack in paper towels, and let them soak up the excess oil as they sit on the rack (and not a bowl). Like HM it's the best of both worlds🤣❤️

Dude the method for cutting up cauliflower is gold.. the number of times I hacked at it forever..
if you store baking powder airtight, it doesn't go bad. my baking powder is residing in a twist of jars and had been bought 4 years ago.
you can use roughly crushed cornflakes for the last layer, it's awesome. Probably good solution for the airfryer too, hven't tried that yet.

Paper towels will steam the breading and make them soggy though. I've tested this a bunch of times.
