Homestead Tempura Recipe Sauce Mix • 1/2 cup mayonnaise (not miracle whip!) • 1/4 cup ketchup • 1/8 teaspoon white vinegar (just a splash) • To taste salt & black pepper • 1-4 chopped cayenne peppers Tempura Batter Mix • 2 Cups flour (shift) • 1 Cup Cornstarch • 1 Teaspoon baking soda • 3 Eggs • 1 1/2 -2 cups ice water (little at time) • Salt & Pepper to taste Tempura Ingredients • 1 Cup flour to coat fish and vegetables • 1 1/2 LBS Fish Fillets • 1 head broccoli • 4 scarlet kale • 3 carrots (chopped match stick sizes) • sweet potatoes (chopped match stick sizes) • Salt & Pepper to taste • Oil (using peanut oil) Cooking Time and Temperature Fish 1-2 minutes (350ºF or 180ºC) Vegetables (320ºF or 160ºC) Sweet potatoes , carrots- 2-3 minutes Broccoli-1 minute Kale, Peppers -30-40 seconds Directions 1. Mix sauce and refrigerate 30min to 1 hour 2. Gather & prepare all vegetables and fish 3. Fill large pan 1/2 way with oil 4. Mix Tempura Batter Mix with 1 1/2 Cups ice water 5. Put half on Batter Mix with carrots and sweet potato (cut to match stick) add 1 egg 6. Add 1/2 cup ice water and 2 eggs to thin batter mix 7. Lightly coat the fish and other vegetables with flour before dipping them into the tempura batter. This allows the batter to adhere better. 8. Once coated, dip your items into the batter gently. Too much batter runs the risk of a crispy exterior and mushy interior. 9. When ready to fry, make sure that your frying oil is between 320 F and 350 F. Any higher and it will be too crispy. Any lower and the tempura will absorb too much oil and won't get crispy enough. 10. Once fried, serve immediately with a sauce and Enjoy! Tempura can get mushy if it sits too long.
FANTASTIC! Written instructions are the best! Combined with your demonstration in the video, I can't mess it up! We don't see a lot of nice crappie in my area of S/W Pa. Like you are getting. What kind of boat is that you have. Now I'm hungry for fish we'll be ordering some tomorrow at fish fry.
I really like tempura fish, shrimp, and veggies, except broccoli. I love broccoli, but for some reason I don't like it in tempura. Or asparagus. Squash and sweet potato are my favorites. We go to a Korean Japanese fusion restaurant and sometimes they get a little creative in their vegetable tempura offerings, but I've never gotten tempura kale!
I see some of the hooks are a little hard to get out. We have always used a branch about a women's little finger size. Stick end into fishes mouth and hold leader against the stick. Just twirl the stick and the hook will wrap around the branch and fish falls off into the bucket.
