this is cool but your big head is in the way of the corks going in. would have been cool to see.
how full do the bottles get before you cork? roughly what's the space beneath the cork? if you leave to much space versus to little consequences? (airborne bacteria vs broken bottle?)
overfilling usually just results in wine squirting out around the cork. Sometimes you do break the bottle. I think the optimal level is right at the neck of the bottle or about an inch beyond the cork. since you have sulfited wine, underfilling buy a little bit shouldn't matter.

We'll first of all for anybody trying to make wine don't forget to add the secret ingredient ....Well is not so secret anymore since everybody saw in the video the guy putting his mouth in the bottle filler !

I am confused as to why you have the capabilities to do this, the know how and obviously the money. But you are not set up to do it. That makes no sense. Why not just build a 80' x 100' shed and put it all in there. Build a cellar below one part of it for the storage and be done with it. I would put the bottle filler on a Stainless steel counter up above where you can box and everything all at once. Doing a lot of work for nothing currently.

the grapes, when they're picked, contain a fair amount of dirt, spiders, and other unpalatable things. Starting the siphon with your mouth the least of the potential contaminations.
