great video! very helpful :). I also just wanted to let you know that there actually exists a pretty popular one-shot about True Polymorph called "A wild sheep chase" and it is kind of similar to what you described. you are just helping a wizard who go turned into a sheep instead.
About a year ago I set out to make a level 1 one-shot so our forever DM would get to play. I made basically the rat adventure you talk about, a rat king living under the village. My inspiration however came from the first monster you meet in Baldur's Gate 1, the rats, and ran with that. I also wanted to challenge myself and create a Legendary Creature for a Level 1 party. That's how the rat king was created. His legendary action was that he could heal 1d4 by eating food that his rat minions had stolen, and a lair action was to summon a swarm of rats/giant rat with a recharge of 6. It turned out great, and was a very fun way to challange players even at a low level and introduce the concept of legendary creatures and lair actions.
When I'm stick in a writing situation, brainstorming to generate ideas doesn't work. I need to analyze my characters, their goals, their motives, their means and resources, their methods, etc. Then I'm able to progress.
