Guess what folks - cooking with QDM strikes again - here is the recipe for Rhubarb Saskatoon Crisp:
Wet:
3 Cups Saskatoon Berries
3 Cups Chopped Rhubarb
1/2 Cup honey
1 TSP vanilla extract
1 TBSP lime juice
Mix together in bowl
Dry:
1/2 Cup flower
1 1/2 cup large flake old fashioned oats
1/2 Cup brown sugar
1 tsp cinnamon
Mix dry ingredients, then add 3/4 cup of melted butter and mix until clumpy
Pour wet ingredients into a 12" greased cast iron skillet, add dry ingredients on top and place on smoker at 350-400F for 20 mins, turn once and let cook until crispy on top and bubbling on sides.
Serve with whipped cream or iced cream.
