Suppose we test for doneness like all other cakes? Toothpick it? In oven now, batter had a good flavor but I think I want to add more citrus zest next time. And orange. My fruit medley wasn't as you suggested. What I had on hand is strawberry, cherry, apricot and fig. It was a mix from Costco. Chopped up the larger pieces for a uniform size. Also didn't have almonds but pecans. Will see what hubby says tomorrow. : ) Chef, do you have any suggestion on adding non alcohol syrup to this cake and fudging the traditional fruit cake experience a wee bit more? I am thinking of reducing fruit juices to a sticky syrup and saturating the cake often. I think your base and my syrup idea I just may get a little closer to a traditional heavy dense bite. Thanks!

Excellent recipe. The taste was awesome! The cake was not too sweet too. I bake the cake in the airfryer at 180°C for 30mins. It turned out to be abit dry. Not sure why?
