Happy Holidays y'all! I hope you enjoy this video -- I was thinking this would make for a great New Years Day feast -- but feel free to use it for a special holiday, anniversary or birthday celebration. I used a beef tenderloin, but you could try this technique with any large piece of meat that you would eat at medium rare. For the beef tenderloin, I smoked it first to an internal temp of 120-123 and then later grilled off right before serving. You could smoke it the day before, chill it down, and then temper and grill off another day. (Makes entertaining easier to be semi-prepped). Enjoy!
Definitely have to give this a try! I’m originally from Indiana, but following your guides I’ve been able to make Texans think I grew up here 😅 Happy Holidays BBQ GOAT!
Merry Christmas to you and your family Aaron. You inspire many folks. Have a happy and healthy New Year.
Good news I can made it the day before. I love the way you do things. I will try a piece of meet call tagliata. Happy new year from Italy!
Hey GOAT, please keep the videos coming. You went ghost for a years but glad you’re getting back on the tube. Hope to visit your restaurant one day. Happy Holidays!
IM BACK. - AF
Love how Aaron hasn't posted new videos in 6 years, pops up out of nowhere and still rockin the sideburns
🐐
you guys are behind. Aaron popped back up about Thanksgiving time! Did you not see the turkey he smoked!??
The man is a legend. The thought he puts in what he does is spectacular.
@@gosman949 You mean the butter he smoked
@@spiralout112 that is a big negative!
I guess you missed the turkey from a month ago.
Hey welcome back!!! we missed you mate :)
I can never get enough of Aaron. What a great Christmas present!
Wonder if Mrs. Franklin agrees with you.
That cross section is one of the most ridiculously good looking cuts I've ever seen in BBQ.
Man. He just explains everything in detail and wants everyone to learn . Definitely the best BBQ out here and his restaurant speaks for its self
My new favorite channel. TY Franklin.
always a treat when Aaron uploads a new video even if its been 7 years since the last one ,looks amazing
"Thermometer Collector." I snorted. 🤣
That pinky up when drinking beer from the can, such a classy guy.
Please keep them videos coming, can never watch enough!
Hell, it's not tea and crumpets. It's BBQ and local brew. In, out, up, down or beer can grip as long as you don't drop your brew. 😆
I lol’d at the mahogany 😂
Thank you for posting new videos! I hope this is a sign of more to come. I've learned a ton watching your videos. Thank you for sharing your craft with us!
I just finished eating when this video popped up. Now I'm hungry again :) Keep the videos coming Aaron, we love them.
Thanks for this video. Is like a Christmas gift from Franklin.
keep posting videos... easily some of the best content on youtube for bbq lovers
The World needs more of you!
Glad you are back Aaron! Years ago I stumbled on this TH-cam channel and I watched everything on it at least 5 times. And you are the reason I bought myself an offset smoker when all my friends bought a green egg. Haven't regretted it for a second.
Love that you’ve put some new content on TH-cam. Hands down my favorite channel.
Aaron is so humble, he doesn’t turn his own brand of charcoal towards the camera for product placement.
Such an incredible presenter and personality for this. What an amazing talent. I cannot wait to get to try his food. Would love to drink a beer (or 7!) with this guy.
Looking forward to my next semi-smoked BBQ - Thanks Aaron!
He is wildly entertaining and informative, love these videos
Glad you think so!
Loved to see Aaron making a video after many years. But to be honest I am more excited to get that beer he pulled out of the cooler!!!
Keep posting! Appreciate you bro.
Easy Peasy..pun intended! Looks easy and delicious.
What a nice Doggie. And, always enjoy Aaron's light hearted approach to everything. Humor is always welcome.
So happy to see you are back. Hope this is the first of many videos from you. You've been missed.
This is the first holiday season in years I haven't been able to smoke a turkey Franklin Style due to my health. This is simple enough I think I can pull it off. Thank you and Merry Christmas 🎄 and happy new years 🎉
We deeply need more inspiration like that Aaron, thank you and happy new year!
Understanding fire is understanding BBQ.
Thanks, bunches, for that cut of beef recipe. I'll be trying that one soon. The black eyed peas was a bonus and basically my exact recipe. I have a habit of doing the peas in a crock pot. It's a great way to have long and slow cooked food on extremely busy days. Lastly, we think alike on the application of fire, choice of wood, and application of smoke. Happy Holidays 🤘😎✌️
Smoked meat, Airstream trailer, and outdoor cooking! Throw in a grandkid and a dog or two and you’ve got heaven. Cheers and Happy New Year Aaron. Thanks for the video.
So glad to see more vids from Aaron! Thx AF
So pleased to see a surprise for Christmas from you Aaron. My wife and I dropped everything we were doing, (watching Christmas movies🤭) to watch your video offering for the Holidays. Single digits here today and brutal wind chills so inside cooking only for this Christmas. Maybe for New Years, expecting 50ish temps. Now to find some beef tenderloin and black eyed peas in time. Thanks so much and Merry Christmas!🎄
So glad to see you back on TH-cam. Keep ‘em coming!
I find that, at my altitude and prevailing wind direction, 1.53% salt works best.
This is better than paying for the masterclass version! Thanks Aaron!
So happy you’re making videos again! Please keep them coming
Looks delicious! Can't wait to try this recipe. Thanks for sharing 👍
I work for Toast in Florida and visited Austin this past November from all the recommendations from the sales team in Texas. Man that brisket was worth every minute in line!
Fantastic video. Nice to see something a little different for New Years. Also lovin the whole setup with the airstream, lights and various pits, looks like a great place to hang out. Thank you Sir
So happy to see you back on the tubes!!!
I now live in Portugal (originally from Virginia) and had not thought about black-eyed peas! They're on my shopping list now. Thanks, and Thanks for the video! I'm going to try that Chateaubriand as well. Welcome back!
Always a hoot and educational. Thanks!
Aaron, so good to see you back on TH-cam. Your level of BBQ is above and beyond all others and I would encourage you to keep posting on a regular basis.
Merry Christmas to you and your family!
Merry Christmas. Watching you from the Philippines, I learned how to smoke ribs from your channel and I would like to thank you for that. Cheers.
I really liked this video because he goes into some great detail when explaining the methods. Keep the videos coming 👌🏼
Merry Christmas from Australia
Let's GO! So glad to see you uploading!
Great surprise seeing a new video!! I watch them over and over👍
Cured, you cured the meat. It's a wonderful technique. Why do sooo many folks have troubles saying cured. Maddening. Anyway I have both your books, love them both. Have a great day. Enjoy the holiday. 🎄🎅🎉🔥👍
The Christmas gift I didn’t ask for but am so happy to get! Merry Christmas all you amazing back yard BBQers!
Thanks to you sir, my mouth is watering now . The only thing missing for me is a crunch of black pepper here and there.
That looks great! Merry Christmas Aaron. I hope you and your family have a wonderful Christmas and New Year.

Happy Christmas Mr Franklin! Thanks for the chateaubriand recipe, looks amazing!
Now we wait for Brad and Matt to follow daddy Aaron. But I bet they don’t have that cool trailer in the background.
Thanks Aaron, very inspiring to throw some oak in the ol’ fire box.
Glad you are making videos again 😪👌😊
Thanking you for this video. Have your book and learned many things. Merry Christmas!😁
What is 1.25% salt. Is that like curing salt?
Ratio of salt to meat
So glad you're posting again! Merry Christmas to us all!
If only I could afford to make my own…I’ll settle for a Franklin BBQ video for Christmas. Thanks for the upload!
Happy holidays to you Aaron as well. Good to see you back!

Santa granted my wish. Another BBQwithFranklin video. I must've been good this year. Which means Santa wasn't paying attention. Shhh.......
Merry Holiday. What a treat!
Happy Holidays to you and yours my brother!
You truly inspire me. You are the reason my faith is strong in one day of owning my own business. I own your books and they are encouraging and pertain a lot of information to soak up. Thanks for sharing your craft! Hope to see more videos soon.
That’s mighty fine……might have to do the same, thanks for taking the time to post the video 😀
Maaan i'm so glad you're back !
Merry christmas !
Thank you for doing this video!
Looks amazing, Happy New Year!
Merry Christmas Aaron thank you for the video now I know what I’m gonna do on New Year’s smoke a tenderloin
Great presentation as always, sir!
I'm not too keen on beef filet because I like more bite to the meat. See where you're going to add the flavours. Like your blak eyed peas very much. They're a bit hard to get over here in the Netherlands but we have several great substitutes. Tomorrow it's rack of lamb for me.... jeeehhhh
Thats looks amazing , i am going to have to try this for sure
I don’t know why, but I get serious Dexter Morgan vibes from this dude lol
Could we get a smoked leg of lamb sometime? I can’t get enough of your videos!
Merry Christmas 🎁🎄. Damn that looks good.
Great vid Franklin!
Hey BBQ GOAT!! What did you do to get expelled to the camper in the backyard? My guess is the loin was inspired to get back into the big house! Love your vids!
When did you start uploading again? This is weird, but I love it!
This guy is the coolest
Great video! Just curious why you didn’t use any black pepper. Thanks
bbq Jesus does it again!
