- High Protein Mexican Style Chicken & Rice Meal Prep!🇲🇽🍗
This is one of the Easiest and Tastiest meal preps, there’s absolutely NO REASON for you to be eating plain chicken and rice
Macros per serving (4 total)
450 Calories | 45g Protein | 47g Carbs | 9g Fat
Ingredients
- 750g Raw Chicken Breast cut into cubes
- 2 tsp Oregano
- 1 tsp Garlic Powder
- 2 tsp Paprika
- 1 tsp Cumin
- 1 tsp Chilli Powder
- 1 tap Salt & Pepper
- 1 Whole Lime Juice
- 2 tsp Olive Oil for cooking
- 1 Medium Onion Chopped
- 1 Medium Red Bell Pepper Chopped
- 100g Black Beans (Brand: Freshona)
- 210g Washed Uncooked Basmati Rice
- 1 tsp of each seasoning used previously
- 300ml Water or chicken stock for more flavour
- Garnish with Chopped Coriander/Cilantro

Important Cooking Notes
- When you add the uncooked rice, let it toast with the spices for 1-2 mins to enhance flavours
- After adding the water, mix well then cover and simmer on low heat for 12-15 mins. Stir halfway to prevent the rice from sticking to the bottom of the pan
- Add the chicken and mix in with coriander

Tip to everyone from a Mexican: don't use the lime juice until it's done cooking because when cooked, lime juice gives off a nasty bitter taste.

I was gonna mention it however I was told that the citrus flavor disappears but I forgot who told me that or where I saw that detail. I agree with adding avocado or at least a chipotle pepper
Also, if you fry the rice a bit in hot oil BEFORE the beans/peppers, itll come out a lil fluffier like they do in Mexico. also its pronounced oREgano instead of oreGAno

Yes there is. You can’t go eating this every day for a week without eating vegetables, fruits, or even beef. You’re body needs different stuff too.

@SuperAvivDash The rice was a bit dry, so you could either boil it a bit beforehand or stew it first. Also, I Coriander is a break or make it ingredient depending on your taste (so don't put too much unless you and your family absolutely love it).
But other than that, I dont have anything negative to say about the recipe

Yeah, my dad's not a huge coriander lover so I'll probably avoid putting too much.
For the rice to not be dry, add more water or tomato sauce :) or both. We typically brown the rice then put the tomato sauce in and fry it a little bit more then add the water. Remember the 1:2 ratio. 1 cup rice to 2 cups liquid😊
I have a tough time with my diet sometimes because I get overwhelmed (didn't have a good childhood in regards to food) and I have depression, but your channel is really making things easier for me so I can focus more on the gym. Thank you.

Cool 6-8 min medium heat
Onion Bell Pepper in same pan
100g Black Beans
210g Uncooked Rice
Extra seasoning
Toast for 1 min
Chopped Tomatoes
300 ml water
Cover and simmer(12-15 min)
Put cooked chicken in and cover with coriander
450 Calories
45g Protein
47g Carbs
9g Fats
Nice breakdown
But the end calories are exaggerated
The chicken breast alone is 412.5 calories per finished container rice is 120 cal per container
And beans at least 40 cal per container

Idk if this is an unpopular opinion but… we don’t actually use that much cumin that often. I personally hardly ever use it. Lately I’ve been noticing a trend of people using waaaay too much cumin in everything they deem Mexican cuisine. If used right, it gives a dish, particularly meat, a richer umami flavor. If you put too much, it smells and tastes like ballsack. If you all keep on with this trend, everybody is just gonna think Mexican food tastes like balls. For the love of god, everybody quit normalizing this.
