- The mud-covered duck eggs are sealed in a jar filled with a mixture of spices including ginger, star anise, Sichuan pepper, cinnamon and salts that have been boiled in water for 20 minutes. It takes two months in winter or about 20 days in summer until the eggs are ready to be served at dining tables.
Traditional Chinese medicine believes that salted duck eggs can help clear excessive heat from the lungs and the yolk oil is effective in treating children's digestive problems.

Those salted eggs are so delicious. use the yolks as a coating for frying some pumpkin or sweet potato fries, and it's an amazing savory and sweet snack (golden fries).

This is Chinese roast duck, not Peking duck. In Peking duck, air is pumped in between the skin and the meat before roasting. When the ducks are hung up to roast, the fat will then easily drip off, leaving just crispy skin and duck meat. The skin and meat are then carved out separately and served in a different style on pancakes.

In the Philippines we mix the salted duck eggs with chopped tomatoes and onions, or just chopped tomatoes alone. Delicious eaten alone or eaten as a side dish with fried fish and rice.

never a fan of how ducks, especially wild ducks smells so I havent tried salted duck eggs really. Salted chicken eggs are really good though and the process in this video is very good to watch, well atleast for knowledge.
