I once visited a farm in Parma that made Parmigiano Reggiano. It was a very impressive operation, not as automated as the one in this video. When we got to the room where the cheese was aged, our guide told us about the quality standards that it had to meet. Someone asked what happened to the cheese that didn’t make the cut. The guide wrinkled his nose and said: “Kraft”.
Thanks to this video I learned that making cheese is not easy.
