    Since I started watching these videos my tea intake increased tenfold. It took awhile to get used to not drinking coffee in the morning but I've been on the tea train and I feel much better for it. Thanks for the informative videos and especially the introduction to gong fu brewing!

    I am currently learning from a tea master in Japan. This is thanks to your videos that got me into learning about tea. I just want to thank you for the knowledge great effort, and passion that you exude through your sharing. I have the priviledge to live in Japan, 20 years now, and learn from a humble tea master....thanks to you. Stay green and lovely through the cup.

    Absolutely agree with you. Definitely no need to sift Matcha. I never sift my Matcha, and it comes out so good.

    I actually love hearing about health in relation to tea... in all forms. I even like hearing about health about tisanes. It would be wonderful in your future videos if you had some time to do outside camellia sinensis video shorts of health and tisanes. I understand if you have to avoid for business reasons doing that though. I just wish we weren't continents and nations away so I could come hang out in Camden and get the true dish on true tea!

    Im a fairly new tea head and am on the way to switch from western brewing style to gong fu or lets just say using more leaf for less water. Im about to order Gyokuro Asahi today, lets see how this journey will be, im optimistic :D And good job Mei Leaf, you were the one who made the last nail to make me a tea head :D

    I don't particularly drink tea because of health benefits. Of course, if you don't overdo it, it generally is good for you. If not the stuff from the tea itself, it is the water you get to stay hydrated. I mostly drink because I like the taste. For the same reasons, I also enjoy good coffee. If you have good quality products, you don't need any sugar or milk or whatever.

      About a year ago, I started worrying that too much tea may be bad for you (I use about 2 kilos a year). Then I found out, the average turkish person used three kilos a year lol.

      @@cmrd_hdcrb Yeah, Turkish Tea is pretty strong. Then, they dilute it with hot water and sugar. A lot of sugar 🤣. The region that consumes the most is East Frisia in Germany. People consume 500g per month. What is too much is, I guess, dependent on your body. Some can handle more, some less. But 2kg per year is still in the ok territory, I assume 🙈.

      @@thomasa.243 ​@UC7MFmUh0JBN8UUYfPV5f8JQ I'm an average person from Turkey and I can say tea drinkers here drink more than 2 kilos a year. (Country has a sizable coffee drinker population.) My grandmother had some issues with blood iron levels because of tea. Since then she limited her consumption. Also most adults I know don't take sugar with tea.

      @@berika6 Yeah, maybe the sugar thing is something that is regionally dependent, I don't know. But I have seen people putting heaps and heaps of sugar into the cup (I don't know how exactly they are called). You have to be extra careful when taking certain medicine. Tea can change the way how they react with your body.

    Sifting seems to produce a thicker head of foam for me, but it does look like you got a plump crema on that bowl - must be the superb whisking technique 😊. Cheers Don!

    Thank you so much for your videos. They're so good!
    I'm new to matcha tea. I was looking for a new way to gain a bit of a boost in energy, along with a fairly healthy diet.
    If you didn't advertise your amazing swaddle bag including wonderful products, I wouldn't have known it existed.
    There's absolutely no room for anything else in our kitchen. The bag is a brill idea. I haven't seen one anywhere else...

    I’m not frightened to tell people to try matcha tea powder daily when they tell me they have cancer. I don’t think it bad to suggest the possibility of helping fight cancer even if that mechanism of action is something I’m uncertain about. It doesn’t negate the possibility of positive outcomes. It’s a great suggestion with no known side effects.

    What I did was push matcha through a strainer so it wouldn't clump on my cup and that there is no bits of matcha, then sift it with a spoon as simple as it sound! And it works, to add!

    Nice rundown, Don. Any suggestions for ingredients to add to matcha for variety? I like it sweet with a bit of ginger or almond extract, but I'm interested in what other people might be doing.

      Eat a sweet treat on the side.
      In ceremoni you get a snack first, dry or wet , then you get the tea ball served.

      I've always taken my matcha pure. maybe what you can do is have a piece of chocolate or some other sweet on the side as most matcha drinkers do

    Now I understand why I like matcha green tea soo much. I’ve only this year begun drinking it daily. If I enjoy that smother “buzz, excuse the vernacular”, of grocery store bought matcha, how much more a cup of what I just saw you drink?

    Thanks to Mei Leaf, I dug super deep into younger sheng (raw) puer tea! I found, that it fits the best for me atm :D couldn't find any medicinal articles about the health benefits about it. It is certainly true that it is very good for you! But how about theanin and catechines in puer? Are there some specific substances included? Such a misterious and wonderful kind of tea!

    Sorry about this question, but what about tea and gastro problems, like gastritis, reflux... I always hear tea is bad for those problems. Right now my stomach is not good, and im not drinking tea or caffeine, its hard! I love tea.
    Since you also share a background/interest in science and medicine, what do you have to say about the relationship between tea and gastric problems?

    Got a question.. if the brew calls for let's say 5 grams per 100 ml of water and you want to use 200 ml or 300 ml of water at a steeping of let's say 20 sec can you double or triple the time to save on tea used. The reason is I know some teas can be steeped many times but let's say I want to just have 3 or 4 cups of tea and I don't want to go through the process of drying or saving my leaves. It would be a good video experiment to see if you bealive its possable to get goods tasting tea using this process.

    Does preparation affect the healthy properties of matcha? For instance, does drinking it pure in hot water more effective than, let's say, a cold latte? Anybody know? BTW, what a gorgeous Swaddle bag!!

      This answer might be a little late but I don't think it makes a huge difference!
      The water matcha is made with is usually pretty cold around 50-60⁰C so that temperature won't affect the compounds found in matcha too much.
      Theoretically, it's easier to digest if you drink warm matcha instead of a cold one because your body needs to use energy to bring the cold latte up to body temperature.
      Also, pure matcha will be probably the easiest to digest opposed to mixed with milk which contains sugar and fats which are compounds that take more time to break down.
      But I am not an expert, and I think in the end you should drink it the way you enjoy it :)

    Does the amount of water in a cup have any impact on the tea's effectiveness? For example, is a teaspoon of Matcha tea in a half cup of water more powerful than in a full cup of water?

      nope. that doesnt matter. the only potential difference would be that you'd consume it more slowly or more quickly

    I drink matcha everyday. I always buy ceremonial grade, organic & it must be from Japan. If I’m drinking matcha in a tea bag form, I prefer Itoen matcha tea bags. I always like celestial seasonings matcha tea bags too.

      @@In_time Not particularly. If you are buying matcha from a quality brand. Even a small business matcha farmer have their matcha tested for radiation, lead, etc. The have pretty strict guidelines.

    Hallo, thak you for your videos! Can you do a video about the effects and health benefits of different types of tea (green, white, oolong, black)? Whats the difference between them? I would be really interested!
    This morning for example I choosed white tea and I dont know why, I just followed the feeling. I normally drink black tea with ginger when its cold like today, but i just didnt feel it right today. So now Im drinking Whie Peony wondering why is this. =D

    I've been drinking matcha since November using almond milk and vanilla oat milk but I think I'm going to change over to water, lime and honey mix.
    Lately I've been drinking it down and not savoring it.

    Over age 50, matcha and green teas should be drunk in moderation because of their high caffeine content. They're stronger than black teas and raise blood pressure more easily.
    I worked with a man in his 60's who drank green tea all day long. Swearing by its health benefits, he developed a severe, permanent facial tic as a result. His doctor made him stop drinking it.
    I love tea and drink black loose leaf types with no problems. That being said, I enjoy ice cream made with green teas and matcha.

    Unless it is a chemical patented and branded by a big pharmaceutical company you can not claim any health benefits, within the last two years I would not want claim anything on the internet, I might get accused of something.

      @@MeiLeaf It is true but unfortunately the rabbit hole goes even deeper with studies, some are ignored, some are considered not high enough standard, others are plain corrupted by groups who have interest in a certain outcome, nowdays most of the things in life are left to ones better judgement and faith. I always keep rewatching the episode you made about seeking the higher truth, I learned a lot from that after spring 2020 to nowdays.
