Of these, flour is the most importnat. I still remember today when I ate the Altamura Bread - Italy, for the first time: divine, it seemed to eat the breads of the Gods. I have seen the Soda Bread and the Ginger sponge recipes years ago on this channel and added them to my repertoire ever since. I make the Soda Bread like once a Week and the Sponge 2-3x a year. Addind some Zest (Orange, Lime or Orange) to the mix can elevate the Cream to a whole new level.

I like how he gives the measurements on only about half the ingredients. Baking is based on formulas, unlike cooking which uses recipes. You can’t give a person only half of the measurements and expect them to be successful
