Hmmm, I was taught to slap it to the inside of my wrist, versus the top of your hand like you do. Frankly, I think your way looks easier. I'll practice this Friday when I next run my wood fired oven. Thanks for the tips.
gonna try your method. my stretching technique leaves my dough thinner in some places and thicker in others, which results in lopsided pizzas and areas that are either too thin or too thick.

What's the hydration? I usually do 70% and feels to gentle for this
