⁕Meatball ingredients:
400 g Lean ground beef
250 g eggplant (2 small-sized), Saute and Mashed
A medium-sized onion (minced)
A handful parsley (chopped)
An egg
4 tbsp Bread crumbs
3 tbsp of extra virgin olive oil for saute' eggplants
3 tbsp of extra virgin olive oil for frying meatballs
Ground black pepper
Salt
For Sauce:
2 Medium-sized tomatoes
2/3 cup of tomato sauce
1 tbsp tomato paste
A shallot
3 tbsp of extra virgin olive oil
2 cup of hot water
chili flakes
Ground black pepper
Salt
Potatoes:
500 g Mini potatoes
1/2 tsp thyme
1/2 tsp garlic powder
2 tbsp of extra virgin olive oil
Ground black pepper
Salt
