In germany we call this dish ,Bratkartoffeln‘ which means fried potatos. Add some smoked bacon or ham stripes or put a fried egg on top with some pickles on the side. Simply delicious.

These are excellent but small tip; if you let them properly develop a crust so do them in small batches they become super crispy it’s great. And if you wan’t to make the German version of this; add some bacon. Delicious!

I've been making Lyonaise potatoes since I was 18 or so. It's an almost intuitive recipe and friggin delicious. It's best with new potatoes or golden potatoes compared to russet.
I've ate different variations of this for decades... I didn't like onions as much when I was younger, but now that I'm old... I love sauté onions. Heck... I can make a meal out of onions today 😂
