  • Welcome back to Anderson's SmokeShow! Today we are adding some stainless steel modifications to my Masterbuilt Gravity Series 560. These mods were sent to me by Luke from LSS-Mods (www.lss-mods.com). Included is a firebox mod, Water pan, manifold cover, and vent damper. All of these are custom fit for the Masterbuilt gravity smoker and can ordered for the 560 or 1050. We will also review the condition of my grill and firebox.
    I have received a bunch of questions about the integrity of the firebox on my Masterbuilt Gravity Series 560. This was the first time that I really had gotten a good look at it. The firebox was warped and it appeared that the finish was wearing away, but that could've been the metal its self flaking away. I have probably close to 30 cooks on it, but didn't see significant damage. It could be the environment that the grill is in. I keep all of my grills in the garage and out of the elements, so that could be a reason why I didn't see the extreme deterioration that others have.
    These stainless steel modifications from LSS-Mods are super simple to install and requires not drilling or screws, therefore can be removed from the grill with not trace of them every being there.
    The Masterbuilt smoker lacks a water pan, which can be used to help keep meat moist as well as help the smoke stick to the meat. This accessory is basically a drop in and should make for a nice addition.
    The stainless steel manifold cover has an anti-drip lip that prevents grease from dripping into the manifold. This should help reduce the chances of flare-ups. It also provides for any easy clean-up. As long as the grill is cool you can simply remove this cover, clean, and replace it back onto the manifold.
    The Masterbuilt has no way to control air flow. The vent damper allows us to reduce airflow which should help keep smoke in the grill, use less fuel, and make for a better smoke.
    The firebox mod for the Masterbuilt Gravity Smoker is pretty straightforward to install, but requires a few more steps than the other mods. As you can see in the video you need to remove the entire upper hopper assembly, but that's only about 20 screws or so and a couple wire to disconnect. Just be sure to have a hammer and a block of wood handy.
    Overall I am very impressed with the modifications sent to me by LSS-Mods. They all fit perfect and should make for a better experience with this Masterbuilt Gravity Series 560. All of these mods are also available for the Masterbuilt Gravity Series 1050 as well.

    Thank you. I ordered the fire box mod for now. I just got my grill and I had never smoked. My 1st butt smoke made me look like a pro. The mod and storing the grill inside should make it last a long time.

    After months of looking at pellet, charcoal and wood grills; since it had good reviews, provided charcoal and wood, because it grilled as high as 700 F and smoked with temperature control so I did not have to tend to the temperature, I purchased the grill at Home Depot to get an extended warranty. I also purchased all the stainless-steel modifications from Luke at LLS and installed them before every using the grill which made the installation easy and perfect all those modifications work perfect. After the seasoning most of the hopper was still full of charcoal. I went through the shutdown process with charcoal still left. I double checked the shutdown following the order making sure that the heat & air intake slides were properly in place, unplugged, and closed all doors. Three to four hours later the charcoal was gone! My first cook with filet mignon steaks turned out delicious and perfect. Went through the shutdown process hopper ½ full, but 3-4 hours later again no charcoal in the hopper. Another cook with my wife making sure that I went through every step correctly to shut down; lots of charcoal left and again no charcoal left in hopper 3-4 hours later. Each time I shut down the hopper in the grill I had half a hopper full of charcoal. We did a chicken, but the probe never worked. They promised to send me a new probe which still has not arrived yet. The fire kept burning, but I closed all slides, and the fire kept burning. The rubber gaskets at the bottom has now come off the hopper and most of my cooking has been at a temperature of 225°F. The paint is peeling in the hopper. In my next cook, although it was difficult, I removed all the charcoal and sprayed the charcoal with water knowing that if I left it in the hopper, I would lose the charcoal in the hopper. The Wi-Fi and Bluetooth connection are complicated and are problematic, full of bugs noted by most people. The rotisserie is unavailable no one has it. If you have a newer Wi-Fi 5G you cannot use the remote on your mobile phone. We have 5 G, so we have tried to many things, but emails for support has no solutions. Answer shut off 5G. After all of this, I wish I got a pellet grill, since I am so disappointed with the lack of support. I have written for assistance, but still no answers about the charcoal still burning in the hopper after the shutdown. This is a great concept for those of us that want to use charcoal & wood, but the bugs are frustrating, I understand the shutdown with COVID-19, but some solutions would be appreciated. If I could just get the hopper to shut down so I don’t burn out all the charcoal, I could get to love this grill. Hoping to hear what I might be doing wrong or if this is a common problem? The slide behind the fan is extremely loose, perhaps this is the problem.

      So I recently got another comment with the same problem of the continued burn.... I have never experienced that on any cook on my MB560. So basic chemistry tells me that something isn’t sealed properly. I have my hopper lid and ash clean out doors adjusted for a tight seal. The next thing that I would look at are the vents and make sure that they are being sealed... that probably means that you have to slide them in when the hopper is empty and look thought there... or remove the manifold and try and see it from inside the grill. Also this is going to be a super far fetched idea.... but those “metal slides” used to close the vents should be different widths. The wider goes on the top and the narrower on the bottom.... they didn’t give you 2 narrow ones right?

    I purchased the mods on the same day that I ordered my 1050
    Waited for 2 months for the grill and the store I ordered it from had no ETA for me .
    Luckily I found a Home Depot 15 Miles from my house that had 2 in stock so I cancelled my order with the other store and drove over and picked it up.
    I installed the fire box mod at assembly and it slides right in when the grill is new.
    These mods are awesome and well worth the money.

    Great job of showing the various mods for the Masterbuilt. I bought the 1050 because of the price point. Having to add an additional $255 is disappointing but sounds like it’s a must do if you plan to protect your investment. Love the smoker so I guess I will fork up the additional cash. Thank you for sharing the info.

      The grill itself functions well and makes great food. The mods will definitely help make for a better experience, but I think routine cleaning and care will also help protect the investment. I don’t think that there is anything that you can do to protect that firebox in the Masterbuilt. According to them it’s built to deteriorate.... but I think that’s a little odd.

    For the charcoal holder (wire grate) I bought some heavy duty stainless steel shishkabob skewers and wove them in with the existing pattern to help keep coals in place. Bought the skewers at walmart. A 4 pack was enough.

      Anderson’s SmokeShow just good for keeping the larger chunks up their. Greater efficiency for burning fuel. I noticed when you pulled your basket out there was a lot of leftover coals.

      Believe it or not... I’m an electrical engineer! Lol! If you noticed in the video I kind of did a double take when I unplugged it because in my mind I figured that someone would ask about the wiring. Granted I could’ve just said that it doesn’t matter, but the first thing that came to mind was just trying to differentiate the two wires. 🤣

    If you want to empty a full hopper remove the ash pan, position a bucket or something at the ash door then pull out the charcoal grate and let your charcoal fall into your bucket. It will take a little work to get the charcoal grate out.

      Funny that you say that, I just did that for the first time on Saturday. In the almost year that I’ve had it I’ve only emptied the charcoal out 2 times.

      It’s honestly crazy to see some of the comments people post. I think my favorite was on one of my ribs video. Title says it all “Fall off the bone ribs” I said it about 5x in the video, it’s written in the description..... someone comments that they aren’t competition ribs and that I’d fail the competition bite test. Fair statement. I would indeed fail. It’s also an irrelevant statement as I never said anything about competition ribs or competition style. Lol people these days....

    The 560 is just about to be released in Australia and I have one on pre-order. I wish LSS-Mods shipped to Australia I would be buying these and installing before I do my first cook. LSS-Mods need an Aussie distributor or they should franchise their plans to a local manufacturer and get themselves some down under coin.

      The manifold gets discolored as you cook. Mine is black as coal now. I heard that MB has made some changes but I haven’t been able to see or read anything about them. Thanks for the update

      Masterbuilt says that they designed the firebox to deteriorate over time and that it’s only purpose is to hold the fire bricks intact during the shipping process. Now my firebox didn’t burn all the way through. Maybe that’s a combo of weather conditions and the fact that most of my cooks never get above 300F... I don’t know. But I think that the best solution for Masterbuilt is to just make a better firebox that doesn’t “burn” away. Now this stainless steel insert solves the problem of the deterioration or can cover up that fragile firebox.
      All of these mods are great, but I am most excited for the damper and the water pan, and they should really make for a better smoking experience. As always thanks for the support Manny!

    Great video and great mods. But you can darn near buy a new 560 when yours wears out for the price of all the mods. Would be worth it for the 1050 though.

      From what I’ve seen from the 1050 it seems to be a better grill than the 560, but that’s to be expected with the extra cost. The 560 is a good grill but a few things could be better like the firebox, or the temperature management.

    I've come here researching from buying a Weber Smokefire. I think this is a better cooker..... but i'm not sure if i want to be ingesting any of those fumes as the paint cooks off in the vertical feeder... natural draw will put this through your meat, also cant see this lasting very long even with your mods. Should be an option for a full stainless model. I would still pay so i don't eat that paint. I don't think any of the current E-cookers are ready. from my research.

      I think there are some legitimate build quality concerns with this grill, but I’m doing whatever I can to help protect it because it’s a great cooker. I keep my grills in my garage when they aren’t in use so I’m protected from the elements. Also the LSS mods will help save the firebox but that’s about it. Some of the “peeling paint” is actually creosote... but initially the paint was peeling on mine too. Some people put foil on the hopper lid to prevent it from happening. Overall it makes some great food and right now you can find these grills for like $300!

    Looks like the firebox mod should be done before first use, that's the only reason I've been holding off on one, I've heard complaint about fire box burning out!!

      Masterbuilt says that the firebox is designed to do that. I like the stainless mods, but they aren’t exactly necessary.

      Yeah I think the stainless steel mods will outlive the grill itself. I am excited to see how the water pan and the damper better my cooking experience

    Nathan K on facebook sells a charcoal grate replacement that has added grates so charcoal doesn't fall through until it's basically ash. Actually adds a good amount of burn time. I can find his link if you're actually interested.

      Yeah I have seen some of those mods. Masterbuilt is actually releasing an updated 560 that has a new charcoal grate.

      @@AndersonsSmokeShow the 1050 has the new grate already. I just didn't see a place to purchase it from them. Nate's is just a bit nicer because the slot for the fire starter is a bit bigger. I just couldn't justify buying a new one just for that lol.

    So I have bad news master built has said that if these are present when you're doing a warranty claim it will get denied. There's reasoning for this and I learned the hard way.

      @@AndersonsSmokeShow I had asked and they said that if any of those mods are present in your photos at time of claim They will ask about it And make a warranty decision it's kind of like Modding a vehicle, And that my warranty claim could get denied if determined that it wasn't factory neglect or enginnering failure.

    I purchased all the modifications and everything works much better when it’s new and slides in so simple. However, I followed all the directions during the seasoning step and I had plenty of charcoal left in the hopper. I went through the shut off properly closed both heat and air intake. Shut off the P ID, unplugged it, and waited to cool it off before putting it back in the garage. Unfortunately before I put it back in the garage I checked and there was no lump royal oak charcoal left.
    What did I do wrong? I also used aluminum foil and made sure that the cover to the hopper was closed. Help any recommendations?
    I would also like to purchase additional probes but they’re out of stock and I don’t want to get a probe that only tolerate 300°F?
    They are also out of the rotisserie, any recommendations on comparable Rotisserie?
    I would like to get a totally wireless probe such as meatstick or meter that I could put into a chicken, do you have recommendation?

      So that’s an issue that I’ve never ran into. In theory, the shutdown method on this grill should smother out the fire by completely restricting air flow. I would make sure that the latches on the hopper and ash clean out make a nice secure and tight seal. Also make sure that you are using the heat and air intake correctly.
      When it comes accessories or add ons from Masterbuilt, I have never really looked into them. When I first got the grill the rotisserie was only available for the 1050.
      I know people with the Meater and they swear by it... but I don’t have any personal experience with it. I did just get a ThermoWorks Signals and really love it’s capabilities, but it’s not 100% wireless as the probes plug into the unit... it does have Bluetooth and wifi though.

      There’s definitely creosote build up, but the lid did peel and expose some metal earlier on in the summer.

      They do come at a cost, but my hope is that they prolong the life of my grill, protect my investment, and make for a better cooking experience. I also just got my hands on another mod that I think will be awesome! Video to come soon! Thanks for watching Bryan!

    This may be a stupid comment but instead of pulling the charcoal out from the top couldn't the grate be carefully removed allowing the coal to drop into the Ash box (cleaned out of course)? My grill hasn't arrived yet so just checking...

      No question is a stupid question! Yes in some cases you can do that, but I had some charcoal wedged in there that prevented me from removing it easily... granted I probably could’ve done it forcefully, but I didn’t want to damage the grate.

    $250 for the mod package with no vent damper? Seems a bit greedy if you ask me... being a welder myself, I'll just buy the steel and do it myself.

      I’ve only welded a couple times in my life.. and I have no clue what material costs are with these modifications. What I do know is that all of the LSS mods that I have fit perfectly and work really well. I will say that I have the same mindset when it comes to doing something myself. I’ll never pay someone else if I can do it cheaper. Thanks for watching

    Grrr I have to replace the whole body assembly. So I have to somehow remove the whole fire box. I hope I don’t have to take it apart completely like you had to.

    I'm very on the fence between this grill and a pellet grill. But I'm not impressed at all that masterbuilt hasn't fixed these issues. Period

      I’m a big fan of the Camp Chef pellet grills. Having both grills side by side you can see the apparent differences in quality between the Masterbuilt and the Camp Chef.

      No contest, go with the masterbuilt. Pellet grills don't produce the same flavor or texture as a pellet grill period. I have many smokers, and I sold my pellet grill cause I wasn't using it. Just make sure you get the 1050 masterbuilt, it's a beast,

      I mean the firebox metal is meant to burn away. They have fire bricks behind there that are curing while the metals burns away. So when the metal burns away the fire bricks are good and ready to use... they cost about $30 to replace one the fire bricks have been worn. Comes with new metal and fire bricks.
      The mods aren’t a necessity they are a luxury

    what is the purpose of the air vent mod.....do you keep it close so you can get more smoke taste on your meat during cook? what are your recommended settings for low & slow vs. searing? or is the main purpose just to block wind from coming in so grill can hold temps steady? Thank you!!

      So it’s used to reduce fuel consumption and keep more heat and smoke inside the grill. Ideally this is for low and slow. When it comes to searing it’s probably going to be best on a “more open” setting as more airflow is going to mean more heat.

      I’ve smoked potato’s and used them for mashed potatoes. I’ve smoked Mac n cheese. Bacon wrapped Brussels sprouts..... I throw a lot of vegetables in there too. Broccoli and asparagus quite often.

      Well even though my firebox wasn’t completely destroyed, plenty of people have had it happen.. so the firebox insert is probably my #1.
      #2 for me personally would be the water pan. Keeping the air moist on low and slow cooks is essential. Most smokers have water pans for a reason... this grill didn’t.
      #3 is the damper and being able to control the draft and keep more smoke in the chamber.
      #4 is the manifold cover. It’s purpose is to make clean up easy and has the anti-flare up lip. I do most of my cooking below 300F so I don’t have issues with flare up, but I have heard that it’s an issue for people running the grill at high temps.
      Now these are my opinions and are skewed because I mostly do low and slow on my Masterbuilt. Someone who does mostly grilling may prioritize differently. Thanks for watching Howard!

    When the paint boils off and falls into the charcoal, does that enhance the flavor of my beef?

      Well I’ve never specifically tasted paint.... now I do have the “bubbles” on my hopper lid. I will say that some of the extreme appearance changes are due to creosote, but I also believe that it’s paint too.

      I don’t think it’s paint. MX P90D L did a video and towards the end he shows his lid and fire box chute. Looks just like creosote to me.

      Truthfully I haven’t experienced many issues with the grill. It makes some great food as it is, and I’ve heard that they are upgrading the 560 and 1050 in 2021! I wonder who told me that? 😉

    I've seen worse fire box damage. I didn't see much on your 560. How many cooks, before mods, did you have over 300 degrees?

      I’m at probably 30 cooks or so. I would say that I’ve been over 350F probably 5-6x... as most of my cooking is low and slow.

    The fact that the metal plates in the firebox "burn away" over time is a bit concerning. Where is that metal ending up, in the food? Why didn't MasterBuilt just use the ceramic bricks without the plates?

      I have seen people with firebox issues on the masterbuilt but im not sure how wide spread the issues actually were… at the time mine was installed my firebox was fine

    I want to assemble my unit tomorrow but am awaiting shipment of LSS firebox mod. I had originally planned to install the mod during my initial assembly of the unit in anticipation that it would make things easier. I was hoping to slide the mod from the bottom up right before installing the fan base. Is this even possible? If not, then I would still have to do it from the top down like your video. If that is the case, theres really no advantage to install mod at initial assembly? Thanks!

      I had the same thought, but sadly, you must insert it from the top. I definitely advise you to insert it during the assembly, because it dropped right in for me -- no banging required! But I had a horrible time reinstalling the heat shield -- the screw holes would not all line up for me. A friend said he also had the same problem, but got around it by inserting nails in all the holes to line up while to keep the shield roughly in place, then removed one nail at a time, inserting the screws loosely until all the screws have been inserted, then tighten them all. Worked for him.

      I’m not sure if any in particular are 100% necessary. I think that if you’re going to run it hot often, then the firebox insert might be a good idea for the long run.

    Between the charcoal and wood flavor of the Masterbuilt 560, but with sub-optimal quality, and the quality and ease of the Camp Chef woodwind, but with a bit less Smokey flavor, which do you see yourself gravitating more towards these days? I love my Camp Chef smoker, but I’ve been real curious about the Masterbuilt.

      I like them both for sure, but my personal opinion is that the Camp Chef is of higher quality. I’m a fan of pellets truthfully, so maybe I’m biased.... but I will say that the smoker flavor is a little more than the Camp Chef. Thanks for watching Matt

    Question, I know you have used your 560 a lot, How can you make the display, just display the TEMP ONLY and not move to TIME, I don't give a crap about time, wifi, bluetooth, or probe temp, I only want to see the temp, I use my own TEMP Probe that I can monitor from inside using my phone, I never cook on time ever, just temp of meat,,,,,,anyway to have TEMP ONLY on display and not scroll??? Thanks

    I’m looking into buying a 1050 but after watching your biscuit test video there seems to be some big discrepancies in the pit temperature and the set temperature on the control board granted all grills have their hot spots does this particular cooker seem to fluctuate greatly and if so what mods would you recommend to mitigate this ie new fan or a new control board

      Well I added a convection fan to mine with a fan speed controller and I have yet to find the right mix, so at this time I wouldn’t recommend that lol

      Once it’s going it’s fairly steady. The inconsistencies that I see are just about always a difference of the chamber temp vs set point

      I think they did... Now I never had an issue with the firebox before I added the insert so thats the only one where I cant "say" how well it did. I do know that its held up though.

    Great mods..............to bad there is a fire brick behind the metal in the fire box, lol. I am sure you got the mods for free so you had to do a video "promoting" them. The newer masterbuilts 2021 and newer are designed differently anyways vs the older ones. They made many changes................here is a hint for you.............fire box and the the grate that holds the charcoal. Gone are the days of the problems that you addressed and time to save $ not buying these WAY over priced mods with the new design of the Masterbuilt's. I do though feel sorry for allllllllllll those that have the older ones.

      I love the Masterbuilt but I am questioning how long it will last. I’m fortunate and am able to store all of my grills in the garage, but I’ll agree that you’ll definitely be better off spending the extra cash if you are looking for quality.

    These modifications on their site are too expensive. The firebox mod alone is $115 the complete mods that you just put on are $315. Keep in mind the smoker cost $500 and needs all these upgrades. I'll pass.

      It doesn't need any of the upgrades, hence the word upgrades. Will they work better with them install? Yes, just like my car would handle better if I replaced the factory shocks & struts with higher quality ones. A 560 is made to work 100% without buying anything. The mods are for people who want to squeeze extra out of their grill. 99% of MB owners don't care about LSS Mods, he makes some good mods. But ultimately they're not necessary and it's a pretty niche market. Which is probably why he makes them to order.
      And even if you buy all the LSS Mods, a Masterbuilt 560 will still be cheaper than a Rec Tec. And charcoal kills pellets for food taste imho.

      Christian Tarquinio firebricks do not “ cure” not even the cheapest kind. The only thing requiring a burn in are some types of mortar. The poorest quality firebrick handles 1750 degree and no gassing off. Metal that burns away is the cheapest junk possible, but rather than admitting this is made of inferior materials, the marketing department spins it off as a feature - something they will not warranty _ theres always someone who will believe them.
