Here is my recipe for LAST MINUTE CHRISTMAS CAKE - for when you wish you'd done before but still really want a Christmas Cake... 500g mincemeat 225g plain flour 3tsp baking powder 150g unsalted butter (room temp) 150g dark brown sugar 3 large eggs 175g mixed dried fruit 100g glace cherries zest 1 orange zest 1 lemon 1/4 tsp cinnamon 1/4 tsp vanilla extract shot (or two!) of brandy, rum or sherry Grease and line an 8 inch cake tin, turn the oven on to 170 Celsius Bung it all in a big bowl and mix like mad - electric mixer is best, stand mixer with paddle attachment is best, by hand is possible but takes longer! Bake for 60-90 minutes, cool completely decorate with a layer of marzipan and then fondant or royal icing and decorations of your choice. Boom - job done - you now have a homemade Christmas Cake!
