Bonjour everyone!
I am just taking you along with me in a week where we're getting the cottage ready for us to move back in as a family. I am also cooking one of our guests' favorite recipes: a butternut and goat's cheese risotto. Of course it will be in the book but here's the recipe:
1 butternut squash
1 orange
1/4 tablespoon chili flakes
4 tablespoons olive oil
1 teaspoon salt
pepper
1 red onion
3 tablespoons butter
300g arborio rice
1.5l vegetable stock (from cubes or homemade)
a large sprig of thyme
3 tablespoons sage leaves cut in half
100g pecans
150g soft goat’s cheese (Chavroux or similar)
About 100g hard / aged goat’s cheese to crumble on top of the dish
Preheat your oven to 200 degrees Celsius.
Cut the butternut in dices of about 2 cm. You can eat the skin but I prefer pealing the squash.
Press the orange to obtain the juice. Mix the butternut dices in a bowl with the orange juice, 3 tablespoons of olive oil, salt and pepper to taste and the chili flakes. Put on a baking baking tray lined with parchment paper and cook in the oven for about 20 minutes until soft. Keep warm.
Now make the risotto : prepare the vegetable stock by dissolving the cubes in 1.5 liter of boiling water.
Mince the onion.
Melt a tablespoon of olive oil and a tablespoon of butter in a deep cast iron pan (le Creuset style) and fry the onion for 2 minutes.
Add the rice and cook for about 3 minutes while stirring until they are all covered in oil and butter and start to be a little translucent.
Add enough vegetable stock to cover all rice. Remove the leaves from the sprigs of thyme by sliding your fingers down the stem, add to the pan and stir. Keep stirring until the rice has absorbed most of the stock and add a little more. Keep doing this until the rice is cooked but still has some bite. This will take about 15 to 20 minutes.
While the risotto cooks, make the topping. Melt 2 tablespoons butter in a saucepan and fry the sage for about 5 minutes until crispy. Break the pecans into big chunks and add to the sage. Stir to coat the pecans with the sage butter. Remove from the heat and set aside.
Now finish the risotto: stir in the soft goat’s cheese. When the cheese is fully melted and all is combined, add the butternut and combine.
Put a portion of risotto on a plate, sprinkle over the sage and pecans and crumble a little aged goat’s cheese on top. Serve immediately.

For your weeds in the stones, try using white vinegar. A couple applications a season, especially getting an early start in the spring, should keep them at bay in an eco friendly way.

Hi I've been in France for 4 weeks now,currently in Montignac Lascaux a very nice town with a river running through. I just love France when the sun is setting 5pm-8pm, the colours splashing across the country side,just beautiful :) One thing that I just cannot adapt to is these square big pillows ! I'm 6'4" and because of these square pillows,my head is not up the bed properly and my feet hang out over the edge of the mattress :( Now here's a weeding tip Don't pull the weeds and if you do,don't shake them. Because at the weed root,have a look you will see the weed's seeds. Use either hot water or a weed wand and it will kill right down the root of the weed plus the seeds :)

You can buy smaller pillows at Ikea in France. I don’t like the big square pillows either. We have both for our guests in your cottage and cabin

OMG! Tigrette is such an adorable name, just as funny & cute as Karl Lagerfeld's cat he called Choupette!!! I love it when the non-human family member receives a perfect name which suit their personality!
Haha, yes we found her in the street as a kitten, starving, skinny, sick and scarred. We figured she had probably already seen a lot in her young life and had fought to stay alive so we named her Tigrette. It fits her perfectly!

The cottage is so cozy and restful. I agree with you about following natures lead as we begin to slow down and ease into the next season. I love to pick some of the mint with its little blue flowers and mix it with the flowers from my garden to put in little vases in my house. Love any squash recipe. As you get older, antioxidants are your best friends and squash is loaded with them. Have you tried using a weed barrier fabric below your crushed gravel? Fall has come to Wisconsin with temps of 55/56 F (12/13C). Leaves are already changing in northern areas. Our maple tree is auburn red. Looking forward to your cookbook. Enjoy the weather.

I love Babbel. I started using it for Danish during covid.
Also, I spray 40% vinegar on my weeds. Its organic. But I would keep the cat in until it dries.
Thanks! They say it hurts the soil as well and if there are plants around that you want to grow well you should be careful with vinegar. What’s your experience with that?
@@FrenchCountryLife i use the vinegar. U r using it on the driveway, I see no prob with that. Just make sure your kitty stays out of it until it dries.

They’re Ikea Ektorp. We’ve had them forever, also in our house in The Netherlands.
👍 If you plant lavender at the bords of your driveway weeds will grow less . But takes 5yrs for the lavender to grow big enough.
I recommand lessenteursduquercy for lavender .

If I do not enjoy goats cheese…what would be a good substitute
Any other soft or even hard cheese you like. It brings freshness and creaminess if you pick a soft cheese and a deeper richer taste if you choose a hard cheese such as Parmesan or even a blue cheese would be really nice! Just pick any cheese you like and try to see what you prefer!
