  • So many of you have told us to try lupin flour in our chaffles that we just had to try it!
    Final verdict: We cant really taste the difference, and like it!
    Original chaffle has approx: 2.5 net carbs and 177 calories
    Lupin chaffle has approx: 1.9 net carbs and 143 calories
    Save on carbs by shredding your own mozzarella!
    Recipe:
    1 cup shredded mozzarella
    2 tablespoons almond flour (or 1 tablespoon lupin flour)
    1/2 teaspoon xanthan gum
    2. -2.5 tablespoons egg white

    I find that, when making a bread, cookie or cake recipe that is all almond flour, if I replace some of the almond flour with some lupin and some coconut - it makes a better cookie, cake or bread. The ratio I find success with is 1 cup of almond flour can be replaced with 1/2 cup Lupin flour and 3 tablespoons of coconut flour.

      I bought lupin flour when I started keto and there it sits! Now I have a reason to try it!
      Also, I’ve collected a whole assortment of things that I’ve seen keto cooks using so maybe you’ll find ways for me to start using my supply lol!!
      I’ve watched several “Keto Cooking /Baking” sites but I like yours the BEST!!

    I use lupin flour in cookies. I use almond flour too but I cut it down by using about a third lupin flour. It gives it more of a regular cookie taste.

    I used your lupin chaffle recipe to make a pizza- it was excellent. My son loved it. My wife loved it. It’s really nice to a keto friendly recipe the tastes like he real thing. Give it a try

    Wow! I've never tried a chaffle before today because I've never liked anything made with almond flour. I finally tried them with lupin flour & love them! The crispiness is beyond. I'll be putting everything on them. Thank you!

    I prefer it with lupin flour! Because lupin crisps up so quickly, I cook these for 3 min, and the outside is nice and crispy but the inside is still a tiny bit soft, which I love!

    I use lupin flour in Heavenly Fan's french fry recipe...instead of the almond or coconut flour...yummm!!

    I use Lupin flour for my flour tortillas. I mix it with psyllium husk powder, oat fiber, etc. Great with fish tacos, etc.

    I've been playing around with your chaffle recipe using lupin flour instead of almond flour. Tweaked two things: 1) used half mozzarella and half provolone but instead of grating it, I ran the cheese chunks through my small food processor and 2) whipped the egg whites before mixing them into the dry ingredients. Definitely helpful when making a large batch of chaffles. Tender inside and very crispy outside. Thank you for your inspiration!

    I do wanted to make a chaffle after watching but I did Not have mozzarella cheese but what I did have was the six blend Italian cheese so I thought why not so I did one egg half a cup of the cheese and 1 tablespoon of the lupin flour with some seasoning & it came out great( in a regular waffle iron.     I make these now, and they're amazing. It's my daily lunch now - 2 chaffles around a 8 oz ground sirloin 90% protein burger.
    For the burger I use an imitation plant-based cheese slice, so I don't feel so guilty about using real cheese on *both* the chaffles and on top of the burger.

    Learned two things watching this video. I’ve been putting in the xantham gum at the wrong time AND I can use liquid egg whites instead of a real egg. Yay! Love you two. 💖

    The ground lupin (coarser than flour) is so good as a swap for grits/polenta. I absolutely love it. Great video! My next chaffle will have lupin flour!

    I just made them with the Costco’s Kirkland brand mozzarella cheese and they were only 2 carbs and 202 calories for 2- it made 4 in my carb manager! I had an open faced egg McMuffin with an over easy egg and a sausage patty and yum!!! I made another batch right away to store for later!

    For anyone whose gotten bitter lupin, or is hesitant because they've heard that, here's the reason.
    Some brands are not made from sweet white lupin. It's not actually sweet, it just isn't bitter. Lupina is sweet white lupin, (which is actually yellow) and I've been using it for years. It's never been bitter, at all.
    I know there are other brands that aren't bitter, but I haven't tried them myself.
    Lupin flour rocks. It's really good stuff.

      Thanks for the great advice, I just ordered Lupina on Amazon. I've been using miracle lupin flour, and here's a tip - any brand you have of lupin flour in a recipe, to get rid of some of the bitterness, just add a teaspoon of sugar, or your favorite sugar substitute.

    I bought lupin flour to make noodles, but haven't tried it yet b/c I got sick with Covid. I'm hoping to make them soon.
    'Serious Keto' is where I first learned of these keto noodles. He doesn't use lupin flour, but does give the link to where he got the noodle idea, where that person does use lupin flour. I believe the link he shares is 'Asian Keto'.
    Also, another TH-camr, 'Healthy Ambitions' makes the noodles both, with and without lupin flour.
    I made the keto noodles using Serious Keto's recipe, no lupin flour used, but does use canned chicken! It was really good and held up wonderfully.

    I use Lupin flour in my bread. *Diedre's Kitchen* has a bread recipe that is great but has flax seed flour, but *I DONT SUGAR COAT* made it swapping out the flax for Lupin flour. That is my favorite Keto bread. I am not a fan of the taste of flax, so swapping for Lupin works great. I use this same dough for hot dog and hamburger rolls and it is perfect for me.
    Some complain about the use of VWG in the recipe but it still keeps me in ketosis.

    I've been using part almond flour and part lupin flour. For the original 2 T almond flour, I use 1 T almond flour and 1/2 T lupin flour. The batter usually needs a bit more liquid; for this amount, 1 T of heavy whipping cream is perfect.

    Thanks to you two I just had my first chaffle I used lupin flour in my new galaxy mini dash. And I got the containers to store them. I put a little onion powder and parmesan in mine and then we all had burgers for dinner. (Were graveyard people) Thank you. Not only is this better for you but it's way cheaper than keto bread.

    I tried this and they're so good!! I used Monterey Jack cheese cuz I have a huge block of it. My husband wants me to make a bunch of them. I added some Slap ya Mama spice to mine. Sssoooo good. Will do a pizza crust with this for sure.

    Thank you for the video. All lupin flours are not the same. Aviator lupin is good plus they have a flake version which can be used as a rice substitute. Carrington farms has a lupin flour that is course and can be used as a rice/couscous substitute. Thx again!

    Here is a new one that is made without cheese and makes a great pizza dough or hamburger like but. The recipe is 4 eggs, 2 Tbls of butter melted and 1 cup ground pork rinds. I made this shaped it into a round pizza dough baked it at 425 for 15 min. And then put my toppings on it and baked for another 7 mins and it was awesome. Would love you to share this.

    Love you gals. Love your recipes & videos. Tried your Chaffel (Improved version with Xanthan Gum) yesterday, ate 3. Today ate 3 more! Yummy! Then I found this one which will be tried for dinner tonight. I was going to shred my own cheese as I usually do in those last 2 batches remembering your comment re the non caking agent added to shredded cheese to prevent clumping, but I noticed that the ingredient "enzymes" is on every package I looked at regardless if shredded, sliced or block cheese. Microbial enzymes is listed on my sliced & shredded packages & just enzymes are listed on the block cheese packaged that I purchased. Just something I thought interesting to share.

    I have been binge watching your videos! I got so excited about your Charles that I ran right out into my kitchen. I had everything but mozzarella! So I used Mexican flavored cheddar…….OMG!…….I was sure it would turn out terrible but to my surprise they were crunchy and soooo delicious! I used a regular waffle maker but I am definitely going to buy a small one because I can see that one big one was too easy to eat the whole thing!

    I don't use almond flour because it causes so much inflammation in my legs, but I have been wanting to give the lupin flour a try. I usually use pecan flour.

    I've used reconstituted PB Fit (one serving) plus an egg and a dash of baking powder, (no cheese), that makes a couple mini waffles.

    I love lupin flour! It makes great keto pancakes! Almond flour is high in oxalates so it can cause inflammation in some. I can't eat a lot of almond flour so lupin flour is great!

    I'm from the south and we love grits... ground lupin beans are a great substitute. I use in biscotti and other baked goods...

      @@lisachapman3879 we love them. They cook fast although i simmer a while like grits. They don't absorb much water though. The ground beans are like stone ground grits in texture. I haven't tried just using the flour or grinding them more first. For creamier texture you could use cream or nut milk even. 'I don't sugar coat' has lots of lupin recipes. Steve at serious keto has a grits recipe and one for hummus too

      @@bethsherrill hi. I have a couple different ones i use and change up at times. I just use about half to replace the almond flour, usually. My go tos for most recipes is Carolyn at all day i dream about food and Annie at keto focus. I use a lot of others, but i know these will be good ones.

    I love your previous improved chaffle recipe, thank you. I tried modifying that recipe because I wanted to save on calories with the cheese. Instead of putting a cup of shredded mozzarella, I put in 1/2 cup. I put 1 tablespoon of almond flour. I put in the whole egg instead of just the egg white. I use the same amount of xanthan gum, 1/2 teaspoon. It makes 2 chaffles instead of 3, so I save on overeating because I always want to eat that third chaffle. They come out great. Check it out sometime. I will have to try them with lupin flour. Thanks for all your great videos and down to earth attitudes.

      Hi! I'm new to making Chaffles. The outside came out really crunchy that was great. The only part of the whole Chaffles craze that I'm not understanding is the inside. It leaves a weird slippery coat in my mouth that I really dislike. Am I not letting it cool off enough or is that the normal texture??

      So here’s a recipe that I have been using and zero slime and 100% deliciousness!! It sounds crazy but please try it. I make an open face egg and bacon Chaffee sandwich with this recipe every morning. My friend let me make her one and she said it was better than her Bojangles biscuit she had brought over for coffee!
      Heat your mini dash waffle iron to light off. Put approximately 1/4 cup of mozzarella (preshredded,I like Aldi brand of Kraft) spread to cover the bottom of the iron. 4 jalapeños (fresh cut rounds or jarred pickled) placed atop cheese and 1 Tbs small chopped white onion.
      Cover with 1/8 cup mozzarella to make sure jalapeño and onion are in the middle of the layers of cheese. Close iron and cook for at least 3 minutes. I cook mine exactly 3 minutes and 10 seconds with a timer! You must let it cool down for several minutes.
      It is absolutely delicious and everyone that has tried it can’t believe how wonderful it is! Let me know how it turns out, if you try it! 😊👍

      I’ve been using a very similar recipe, only 1/4 t. baking powder instead of 1/2 t. xanthan gum. It makes two very filling chaffles; I may try using a smaller amount in the iron and making three instead.

      Hi Desiree, I modified the recipe also: I use 3/4 cup of mozzarella, but I use my little cup on the Magic Bullet to mix the dry ingredients first, add the mozzarella and grind it up some more and then add the it all to the egg (I use the whole egg as well). Except I'm high altitude, so I add a teaspoon of water to the mix to help adjust. It makes 2 generous chaffles, but I like all the holes filled. :-)

    KetoFocus has a recipe for almost 0 carb tortillas and she uses part almond flour, and part Lupin flour. It looks really good and I bought the Lupin flour to make these, but I haven’t tried them yet. The video is called “never buy low-carb tortillas again“

      In the fridge they last 5 days or so. If you pop them back in the chaffle maker for a bit they get crispy again! -Em

    Lupin flour is _too expensive_ for me. I've switched to sunflower seed flour, as a _1:1 replacement_ for almond flour. I grind raw seeds in a coffee grinder. They're

    I use lupin flour in bread recipes and other recipes. I like it. Check out I Don't Sugar Coat. She has some great recipes. Serious Keto also has some lupin recipes.
