My Mom and Dad ran a restaurant in Tennessee in the 50’s and 60’s and I just love the nostalgia these recipes bring to me. I have made the chicken fried steak (pork) multiple times now and we love it.
My personal favorite is the squash and okra. Mama did not add squash to our okra but I really think it adds to the flavor.
Thanks for the memories of Henry’s Restaurant on Highway 41 in Haletown, Tennessee.

That's how we ate it when I was growing up except mom would chop up onion to cook with it because Dad loved onion. Mom would also put a bunch up in the freezer to eat year round. She'd fry it half way done then freeze it and it kept really well. We always had a huge garden and we had to pick it every day and there is nothing in this world quite like a fresh picked tomato.
