It's WAY easier to remove the old seals if you remove the Allen head bolt on the bottom of the fork. (7mm I believe) They just pop out... No hook necessary.
The customer supplied the fork oil. Don’t remember off the top of my head. Anywhere between 5 and 10 weight usually. I would search on the web for your specific year and specs.

its called a caliper yes a caliper to measure thicknesses and depths

no need to punch the axle out. stick a phillips screwdriver through the holes on other end of axle and pull.

Use a socket. They were probably added aftermarket.

Some add heavier weight oil than 10 weight like 12 weight say it's better
I just put 20w in my 600 and absolutely hate it 😂
