My mother learned how to make this in 1936, from a woman from Oklahoma that moved in next door to her, in California. She used finely chopped head-lettuce, and sliced green onions. She browned about half a package of thin bacon, took it out of the grease, added a couple of tablespoons of vinegar and sugar to the bacon grease, let them boil, and poured it over the finely chopped iceberg lettuce, and crumbled the bacon over the top. She called it 'wilted lettuce'. It's pretty darn good!

She used iceberg lettuce, and I used the little baby leaves as my lettuce came up, from the garden. The lettuce wilted right on down to MELTED, almost.
By adding ACV, you're basically doing a variation of oil and vinegar salad dressing, right? I imagine it smells wonderful and tastes divine. Can't wait to try it!
Made kilt lettuce (no vinegar) for the 1st time today. It is good &, saw it on Celebrating Appalachia. She's in North Carolina (I think) & doesn't use vinegar either but one lady I saw making it with vinegar mentioned it being a German recipe. So there must be regional variations. I bet it's good both ways since the oil with the vinegar would basically make a vinaigrette dressing. Thanks for the lesson & God bless.
YES, I have used always a apple cider with water added to it. The amount is based on how much salad you are making and the smell of the vinegar and water will tell you how strong you want the vinegar. Love this stuff. My Mother always said it makes you sleep good too. I do not use sugar.
We've always just called this 'Lettuce and Onions'. You make it almost exactly like my Mama does. We only use bacon grease too. The only difference is we save the bacon for sandwiches or something else. I don't think I would like it with sugar or vinegar in it. Southern WV here. God Bless!

My Kentucky grandma taught me this and she used bacon grease, white or apple cider vinegar and a bit of white sugar for the dressing.

Bacon grease, cider vinegar, sugar and a little corn starch in some water, was my Grandmother’s recipe.
