This is my first listen to this band and this type of music, having my primary roots in heavy metal rock. I came here accidentally and I find myself strangely drawn to this rhythm and beat and pleasantly disturbed by the different random note selections throughout the middle part of the song. Where does this type of music originate?

I think you're talking about an accidental note, a note that doesn't belong in the original key signature, but it still works. This song is in the key of F minor which contains these notes in order: F, G, A-flat, B-flat, C, D-flat, E-flat, and finally back up to the F. The key of F minor has 4 flats. In the main chorus, or whatever you call it, it has these beginning notes: F A-flat G C / F A-flat G C / but in the third set, it has this: F A-flat G (B-NATURAL) That B natural is the (off note) or the accidental you were probably thinking of.
He only acts like that to producers who make the most bland woodblock shitty fruitloop tracks and get payed and praised by millions who don't know a ducking clue on how easy there tracks are and how poorly made they are, example Martin Garrix-Animals, Joel started at the bottom low and went to the tippy top by his own knowledge of master producing and now overtopped by app using cunts who only care for money not the craft itself, I would be mad to!
But overall he is kind of snobby and acts like a jerk. But cares about his fans and does not see us as a ATM like most to would. he was maybe always a jerk,but ultra never allowed him to show his true attitude cause people would not like him as much, he was always so nice during the ultra mau5 days, maybe he was acting nice for the publicity.

Lookup videos on (and try to understand) 'Polymeter' ... btw there's a significant difference between that and 'Polyrhythm' and many people incorrectly use these two terms interchangeably. The reason the melody has this 'slightly offbeat feel' is that the song is in 4/4 yet the melody is in 9/16.. essentially there is an 'extra' 1/16th (8/16 is comfortably divisible wheras 9/16 is what's called 'co-prime' [the denominator doesn't divide the numerator]) note on each repeat of the melody, meaning that on each repeat of the melody it "Slip"s 'off by a 1/16 note from where the melody stated in the previous half bar. However after a few repeats he does leave an extra 1/8th note pause just to make sure every 4 bars it snaps back to the same place it started so there is order and chaos to the rhythm of the melody. So cool. I used to love this song years ago before I knew any music theory and it's amazing rediscovering it and understanding more of the nuances that have been put into it to give it it's unique and powerful effect! If you're wondering how to tell that it's 9/16 I would first try to understand how 7/8 feels ( count: 1 & 2 & 3 & 4 | 1 & 2 & 3 & 4...) then try to understand how 9/8 feels (count 1 & 2 & 3 & 4 & 5 | 1 & 2 & 3 & 4 & 5) then try both previous examples without saying the '&'s and you can feel an 'interrupted' quarter note rhythm... once you have 9/8 you basically have 9/16, it's just twice as fast.... with this melody it is like playing a melody note on the 1,2,3 and 4 of the 9/16 rhythm: "1 & 2 & 3 & 4 & 5" with each of the '&' beats and the '5' beat being silent. Once you have that understanding, play the song slow, (try 0.5 or 0.25 speed on YT) you can speak all of the beats 1 & 2 & 3 & 4 & 5 over the music and hear the melody notes hit on the 1,2,3 and 4..... hope this helps!! :D
