  • Today, I am going to be making 'Fukujinzuke'.
    Japanese curry rice is always served with Fukujinduke and never good enough without it.
    This is a kind of pickles we are not making at home, but the best homemade. Easy to make you can freeze it.
    Daikon radish
    cucumber
    eggplant
    carrot
    lotus root
    450~500g (1lb) in total
    2 ts salt
    ・Brine
    1/2 cup(120ml) soy sauce
    1/2 cup(120ml) Mirin
    1 tbs sugar
    2 tbs shredded ginger
    1 chili pod
