You can hear it in the background of the studio version of Ballad of John Henry, most notably in the solo section; he also uses it on the live rendition of the song as well. It generally works like this, sourced from HowStuffWorks: "A theremin works by generating electromagnetic fields around two antennae. A straight, vertical antenna controls pitch; A horizontal, looped antenna controls volume. A masterful player makes very small, precise finger and hand movements in the field around the vertical antenna to change pitch and create melodies."
