You can make a version with challah bread by tearing pieces of the challah off the loaf, filling the pieces with egg salad, folding them over into a little pocket, dipping into egg and panko and frying. The presentation is rustic so it's more like bites than a sandwich.
The all together chop is not something people challenged with counter space or small cutting boards can do. As always you provide inspiration on common sandwiches!
Mix hard boiled eggs and Velveeta into your favorite tuna salad recipe , put in on a hamburger bun, wrap in aluminum foil and then toast it in the oven......you're welcome.

Another Saffa recipe you should try is sosaties, they are grilled, marinated meat skewers. Absolutely delish. My fave is lamb sosaties, marinated in a slightly sweet, curried marinade, skewered with onion and pepper chunks, sometimes I add dried apricot to the skewer too. Try them, you won't regret it.
I used to work in a restaurant where we made a sandwich, dunked it an egg batter and then deep fried it. It was a fried club sandwich otherwise known as the Monty Christo. i have made grilled egg salad before - LOVE putting the cheese into the mix and frying it. I would put on sourdough with munster and super thin tomato slices. perfect double crispy egg salad toasty there!

For the fried egg salad, to give it more structure, I would crack one egg into the egg salad mixture. Mix it well, then scoop it onto the flat top. It'll come out more like a crab cake. Maybe even roll it in some panko first before throwing the patty on the flat top.
One of my go to staples has always been microwaved egg salad between two slices of hot buttered toast. This kicks that up a few notches, gonna have to try it!
Pro tip. You can use a microwave egg cooker to hard boil eggs if you get the settings right, without the need to peel them. Usually for 2 eggs, it is 2:10 at 50% power with the cooker wrapped in a moist paper towel. Just be careful, the yokes can literally explode with surprising force... Obviously, you can't make deviled eggs with this method, but for egg salad where the eggs are just going to be cut up, it works like a charm.
