I asked him if he wanted me to make him puff puff he said "what is that?". I told him its like Ghanian bofot, basically the same. He say NO Naija say one thing, but taste is totally off. XD
I’ve eaten Jollof Rice made by some friends from Nigeria. They cut up a chicken, browned it on the stovetop then added it to the rice before baking in the oven. Very spicy but so delicious! Will have to try your instant pot recipe.
yes so true, but I think the parboiled worked best in the instant pot. I use jasmine or basmatic if I do an oven version. In the instant pot i think jasmine rice doesnt come out right.
I’ve wanted to try Jollof rice for a while now but never got around to it. I’ve seen people on TH-cam make it but it was with so many tomatoes. I’m so glad to see that it can be made with tomato paste!! I never would’ve thought about that. Thank you!!
Go for it! Tell me how it turns out. If you have a pressure cooker this is a no fail recipe. Jollof can be tricky to master at first, then once you get the hang of it its a family favorite.

@@AllAboutPurple pardon me if i misunderstood you comment. when it said "didn't taste like jollof" I guess u were asking a question did it taste like jollof. I thought you were saying that it doesn't really taste like jollof rice. thats why i was asking if you had really tried the recipe. no it is not traditionally made in this pot, very true. It was just easier and quicker for me to make it this way especially since my hubby likes alot of jollof rice.

Yes you can! That would be tasty, I even sometimes do chicken. however for fish I would cook it seperately then mix it it. crayfish or shrimp would be very tasty, but cook them on the stove first then add when finsihed so they wont overcook.
actually parboiled rice is uncooked. you arent parboiling it yourself, it already comes like that dried. i honestly have only had good results with the parboiled rice from the store, so I can't speak to how it would turn out otherwise.
Hello! Did you remember to add the water or chicken broth? If you are using more than the amount of rice I am using, make sure to increase the water content. But i have gotten the best results only using 2 cups of rice. There is a greater liquid / rice ratio than in most rice recipes. I have never gotten a burn message and I make this all the time. But I have also heard that some ppl's instant pots are a little more sensitive. so my other suggestion is to My other suggestion would be to take out the stew after cooked (the tomato paste, onion, spice mix) and only mix half of it into the rice, then add the blended mixture. Lay the other 1/2 of the stew on top. When the rice finished cooking mix it in and it will combine during the 15 min set time. Hope this help!

oh yes that is true. palm oil has its own special taste it adds. i typcially use coconut oil but i have made with palm oil and its tasty. thanks so much!
You can add meat to make it if you wish. But I actually like to prepare my meat seperate. A good choice would be adding chunks of fried beef. When I have it on hand, I use homemade chicken broth instead of the better than boullion.
I tried it but in a regular pot but mine didn't come out like this🤦🏾♀️lol idk what I did wrong.. but then again, give me anything but rice to cook 😂😂 for some reason, me and rice dont get along for nothing lmao
im so sorry! this recipe is designed for a pressure cooker. the liquid ratio is very different if not using an instant pot. in. pressure cooker there is no evaporation, so you can use just the right amount of liquid. in a regular pot you need much more liquid.

Adding meat to the jollof is really super delicious! it adds another layer of flavor to the dish.
Never thought to make it this way! Ghanaians typically use Jasmine rice and Nigerians typically use parboiled rice but this looks like a good recipe!

Yes you can leave them out. I like having atleast 1/2 of one. It brings out the other flavors

i didnt use palm oil in this recipe. but you could if you want.
