What did you use for that foam padding on the cross bar? I like that idea because it provides something to "give" a little bit when tightening it down. Currently I use large foamy pads but they are too big and provide too much play.
That's not really right. The front and rear straps need to be at opposing angles, not semi-parallel to one another. You could push that canoe from the rear and push it all the way off the hood like you came to a hard stop. The front and rear string just don't do anything like you have them.
I usually use small rachet straps. One through the canoe's front carry handle forward to my bull bar or front tow hooks. In the back I wrap around the canoe's rear seat support and hook onto my receiver.

How wide are those crossbars? I have a 2020 Subaru Outback and will be carrying two canoes.

They come in a wide variety of lengths.
you can see NRS-12 on the side, so these are the 12 foot ones :)

That string looks pretty thin!?!
