We, as a species, have come so far from these deeply personal approaches to farming into the barbaric conditions that some domesticated animals are farmed in. Back in the 50's/60's my Scot Grandad would Ghillie all day for the well liked Southern Stalkers visiting the Highlands, A haunch was his likely reward. My Dad said it was rare access to decent meat. For me these days venison liver is the rarest but most appreciated treat. Enjoyed this post btw.

The key to good stalking, always feed the deer in the same place at the same time every day, except the day you bring your clients out, then you just feed them lead as they patiently wait for you, from the same firing point you "have never used before, honestly". Great cooking as always Tom.
