      That's not a sirloin, that's a shell roast or strip roast. It's on the other side of the porterhouse from the filet. Or is this one of those things that's different across the pond?

    6 years ago when I was pregnant with my daughter, I was obsessed with sirloin! Served with mashed potatoes and homemade béarnaise sauce, still love it 😍 I also cook sirloin stew.. sirloin, whipped cream, Soy, yoghurt, creme fraiche with fried mushrooms. I serve it with rice and mozzarella. Its so delicious ❤️

    It’s true about temperature. Seasoning the beef and searing. It is a matter of choice. But when it comes to temperature, that’s where everybody has to be on the same page.
    I suggest seasoning, a prime rib 24 hours before roasting it. Let it sit from 30 to 45 minutes to get to room temperature.
    No need to sear the meat. The seasoning has already dried out the outside of the meat and you’ll get a nice crust. The seasoning has kept all the juices on the inside.
    There is all kinds of different temperatures you can roast a prime rib at. It’s a preference, but the main thing is the temperature of the meat when it is roasting.
    Don’t go past 145 for medium rare or 150 for medium. When you take the roast out and let it sit. It’s going to raise the temperature and cook the meat more.

    For med-rare, I actually shoot for 48 internal. Rest it, covered with tin foil or in a 40 degree oven. Btw that 30 to 40 degree oven is also a great way to get your roast up to room temp 😊

    Question: when doing a prime rib or a roast like the one you made for a group. How would you serve different temperatures? Would you slice at med rare and heat up slices separately to desired temperature?

      I got a sirloin round roast bigger than that, but it certainly wasn't waygu. It was about $65, so probably another 20-40 dollars more at least.

    Why would I bring it to room temperature? The laws of thermodynamics are absolute and not subject to interpretation. The difference between fridge(4°)and room (23°) temp is minuscule compared to the energy difference, when rising it to 125°C+ its science.

    You should not let meat come to room temperature long. Temperature danger zone. True the heat might kill it all but you never know.
